Breakfast at Sentro 1771

A jogger takes a break in Serendra before pushing the last mile. A pair of dog owners in their regular morning walk check the breakfast menu posted outside the many establishments at Serendra. There's a nice stillness in Serendra on a weekend morning, as the early morning crowd slowly trickle in, looking for one thing. Breakfast.

Just a few minutes past 8am, Sentro 1771 at Serendra is filled with the early morning crowd for the popular breakfast sets. After trying the signature dishes at Sentro 1771 for lunch (see my previous post here at  http://dude4food.blogspot.com/2013/06/sentro-1771-rediscovering-old-favorite.html), it was time to try Sentro 1771's unique modern Filipino twist on breakfast.

Sentro 1771 offers both Filipino and Western-style breakfast sets from 7am to 10:30am daily. And on a beautiful weekend morning, a good breakfast is mandatory to complete the morning experience.

The bright interiors surrounded by floor-to-ceiling glass windows make Sentro 1771 a perfect spot for breakfast, washing the entire place with natural light. The open kitchen fires away for the first orders of the breakfast service, as Sentro 1771's staff welcomes even more early morning diners.

I start the day at Sentro 1771 with a cup of their sweet and thick Hot Chocolate. Dark, rich and sweet, it's a refreshing pick-me-up before the breakfast.

Then, breakfast is served, starting with Sentro 1771's signature Catfish Adobo Flakes (P 300), served with garlic rice, tomato & onion scrambled egg and a choice of brewed coffee, hot tea or hot chocolate. The crisp catfish flakes is light and mildly flavored, with a texture that complements the garlic rice and scrambled eggs. Sentro 1771 uses only farm fresh organic eggs, and this is evident with the deep rich colors of the egg dishes.

Sentro 1771 also cures its own corned beef, and its not surprising to find their bestseller in the breakfast menu. We sampled one of their corned beef breakfast specials, the Pan de Sal Sandwich (P 210), whole wheat pan de sal with ginisang corned beef, a light and comforting breakfast dish with familiar flavors. The corned beef is deliciously moist and tender, and the whole wheat pan de sal adds a unique layer of subtle flavor to the dish, and pairs well with the hot cup of chocolate. Sentro 1771 also offers their signature corned corned beef in a breakfast set, served with garlic fried rice and scrambled eggs. You can also go for Sentro 1771's adobo flakes pan de sal sandwich, another tasty option. Sentro 1771 only serves whole wheat bread with all its breakfast dishes.

Baguio Longganisa na Durog (P 350), smashed longganisa fried to a crisp, served with garlic rice, tomato & onion scrambled eggs and a white vinegar dip. Nothing like a pork dish to start the day, and the Baguio longganisa has that sharp garlicky flavor that just goes so well with the garlic rice. Add a little vinegar to temper the richness of the longganisa, and you have a classic Filipino breakfast.

Sentro 1771 has more surprises up its sleeve, with the unique Hole in One (P 280), french toast with a hole in the middle and a fried egg cooked in it, topped with crispy bacon and served with pork & beans, brewed coffee or hot chocolate. A perfectly cooked sunny side up right smack in the middle of your french toast...nice. The crisp bacon adds a nice salty and crisp layer to the dish to round out the flavors. The bacon strips are different, yet the crispness and bold flavors are comforting.

Adobo Flakes Fried Rice (P 210), garlic fried rice mixed with chicken adobo flakes, spring onions and topped with egg with a side of fresh tomatoes. Homey, comforting and familiar, topped with a perfectly cooked sunny side up, just can't get any better than that.

If you're craving for pancakes, Sentro 1771 has that covered too. Sentro's Homemade Pancakes with Banana (P 185), thick and fluffy pancakes with the mild sweetness of bananas and a sweet option for breakfast.

Cucumber Lemon Cooler (P 110), a healthy and refreshing drink to wash everything down. This, and Sentro 1771's Green Legs, are my personal favorites.

To cap a hearty breakfast at Sentro 1771, why not go for their signature desserts. The Fried Suman and Mangoes (P 180), always a winner...

...and the unique Keso Flan (P 220), served with slices of salted egg and queso de bola. When I first tried this dessert some weeks back, I thought combining salted eggs with the sweet flan was a bit strange. But this is something you have to try, trust me. A piece of sweet flan, a slice of salted egg and queso de bola, and you'll be pleasantly surprised with the medley of flavors that just work so well together. Definitely different.

After a satisfying breakfast, the stillness of the morning slowly fades away, and the usual mid-morning rush takes over at Serendra. But all's good, and it looked like another great day at Serendra...

Another Round at Raffles Makati's Long Bar

Great cocktails. Great food. Great company. And one cool place. All the elements for an awesome weekend afternoon at Raffles Makati's Long Bar.

In one epic weekend afternoon, I sampled a round and more of Long Bar's signature cocktails, including their new Bar Chow at the Long Bar, plus a selection from Long Bar's new Power Lunch Sets (more on the new lunch dishes soon in a follow-up post).

After sampling the legendary Singapore Sling and Long Bar's other signature cocktails (see my previous post here at http://dude4food.blogspot.com/2013/01/singapore-slings-gold-flakes-and.html), it was good to be back, this time to sample Long Bar's bar chow. Not your usual pub grub, this is, after all, the Long Bar. Served daily from 5pm to 2am, Bar Chow at the Long Bar includes a selection of classic Asian and international dishes and reinvented pub favorites to pair with your favorite cocktails. Cool cocktails and great food. This was going to be an awesome afternoon.

Just like the iconic Long Bar in Raffles Hotel Singapore, listed as one of the best bars in the world, Raffles Makati's Long Bar maintains the rustic and graceful old world charm, down to the signature cocktails and peanuts. And yes, you can simply drop the peanut shells on the elegant tiled floors of Long Bar, just like the Long Bar in Singapore. A truly liberating experience, and one that sets Long Bar apart from  other bars in the metro.

Inside, dark wooden tones add a formal flair and sophistication to the Long Bar's cool vibe, and the ceiling fans add that piece of nostalgia and character, a throwback to colonial times. One feels a sense of tradition and history, layered with a cool modernity, just the place for a round of cocktails.

The Long Bar also offers al fresco dining areas, allowing one to gaze up at the impressive structure of the twin Raffles and Fairmont properties. It's also a cool spot to enjoy your cocktail when the sun goes down.

Cocktails at the Long Bar not only follows tradition, but a philosophy shared by Fairmont and Raffles properties worldwide, seeing the bar as an extension of the kitchen. This philosophy is summed up with Fairmont's F.A.M.E., or the Fairmont Artistic Mixology Experience, using the best spirits and the freshest ingredients for some of the finest cocktails anywhere. And I dive right in for an old favorite. The Long Bar's Panutsa Old Fashioned (P 380), a blend of Jim Beam Bourbon, Panutsa Palm Sugar, Orange Bitters and an orange peel, my personal favorite. This would probably be Don Draper's cocktail of choice. The classic Old-Fashioned is given a cool twist with the palm sugar, giving it a subtle sweetness but retaining enough bite to put some hair on your chest. After a few glasses and you'll definitely feel...like a boss.

Long Bar's other signature cocktails then followed. The Pineda Mojito (P 380), a refreshing blend of Havana Club 3 Anos Rum, Fresh Lime, Thai basil and mint, mandarin orange and topped with soda bubbles. The fresh lime, mandarin orange, basil and mint add a refreshing sharpness and layers of flavor to the premium aged rum, just perfect for a weekend afternoon.

Want something refreshingly dry? The Lychee Martini (P 380), with house-infused lychee Vodka, shaken (not stirred...just had to say it) until icy cold. Crisp, clean and bold vodka flavors straight up with just a whisper of sweetness from the lychee for that distinct dry sensation.

The Chinese Five Spice Fizz (P 680), with Remy Martin VSOP, lemon, soda bubbles, Chinese 5 Spice syrup, and fresh ginger. Sweet and soothing, with a delicious hint of ginger, a mild cocktail with a unique flavor. And this pairs well with any of Long Bar's Bar Chow.

The Classic Singapore Sling (P 380), the Long Bar's proprietary concoction with Tanqueray Gin (no other gin will do), Cherry Heering, Cointreau, fresh lemon and pineapple, Angostura Bitters, topped with Benedictine. A visit to Long Bar won't be complete without this, and this one completes your Long Bar experience.

And while at the Long Bar, why not go all the way with their unique and indulgent concoction. The Raffles Makati's very own and exclusive take on the signature Singapore Sling, the Makati Luxury Sling (P 680), an exclusive blend of Tanqueray Ten, Cherry Blossom, Grand marnier, Benedictine, lime and pineapple juices, and Angostura foam. Oh, and 24K gold strips...real gold in a glass. This, and discarding the empty peanut shells on the Long Bar's elegant tiled floors, has to be one of the most liberating experiences. Nothing even comes close...

After a few more rounds, it's time to sample some of Long Bar's signature Bar Chow, available daily from 5pm to 2am, starting with Long Bar's take on the classic Tarte Flambee (P 350), an Alsatian flatbread dish covered with fromage blanc or creme fraiche and a variety of toppings, sometimes called a flammekueche. First up, Spicy Beef Tarte Flambee, tender and flavorful beef on crisp dough topped with herbs and sesame seeds for an Asian twist. The spice cuts through the rich beef in a perfectly balanced way, and not too overpowering. The crisp texture of the freshly baked flat bread is just perfect with any of Long Bar's cocktails.

The classic Bacon & Onion Tarte Flambee, a blend of rich and deliciously salty bacon with the mild sweetness of onions on crisp dough. You just can't go wrong with bacon. Seriously.

Spicy Beef with Avocado, a unique medley of sweet and spicy flavors and textures. The avocado adds a creamy richness that contrasts with the crisp flat bread, and like all of Long Bar's Tarte Flambees, there is a delicate balance in flavors.

Ginger Chicken & Coriander Tarte Flambee, another unique combination, this time with tender and smoky chicken with herbs and vegetables. Again, the medley of flavors are perfectly balanced in each and every slice. Pair this with the Chinese Five Spice Fizz and you have your very own happy hour at the long Bar.

Smoked Salmon Tarte Flambee, my personal favorite. Fresh, premium salmon with clean, subtle flavors that pair well with any of Long Bar's signature Slings. Simple flavors using the freshest, premium ingredients works all the time, and this does not disappoint. Long Bar's Tarte Flambees are light, yet flavorful, with each version providing distinct flavors, and it's a good idea to go for two or three different Tarte Flambees along with another round of cocktails.

The PBB Trio (P 255), pork belly buns with cabbage and mustard. Crisp fried buns with tender pork belly, fresh veggies and a nice sharp mustard to bind it all together. Sounds good, tastes even better. A cool Asian twist to bar chow that's comforting yet different.

This. Pork Rinds (P 185), with chili and tamarind rub. Pure pork bliss. Not your usual light and airy skin cracklings but huge slices of pork belly deep-fried and dusted with a flavorful rub that brings chicharon to an entirely new level. Each piece is noticeably heavier than the regular crackling, and the rub gives it a sharp and distinct flavor that cuts through the richness of the pork belly. Salty, lightly sour with just a hint of sweetness and a cooling heat from the chili combine for a flavorful punch in every bite.

This goes well with the Panutsa Old Fashioned or the Pineda Mojito, or a few beers. After Long Bar's Pork Rinds, any other chicharon will just be, well, any other chicharon.

After a few more rounds, Chef de Cuisine Gregory Georges (L) and Executive Pastry Chef Didier Derouet checks in on the group, now noticeably happier, with the cool bar chow and cocktails. But Chef's Gregory and Didier have more tricks up their sleeves. It was time to sample The Long & Short Of It, Long Bar's extensive power lunch sets, as the chefs return to the kitchen to prepare another round of dishes...more on this in my next post.

Drop by the Long Bar during Happy Hour, offered daily from 5pm to 8pm. Priced at P 680++ per person, which includes one Chef's Sampler Platter, unlimited red and white wine, Singapore Slings and local, imported and draft beers. Definitely more reasons to catch a few cocktails at the legendary Long Bar. Next up, we sample Long Bar's Power lunch selections...stay tuned for the coming post.

Another round at the Long Bar? Definitely. Special thanks to Loni Balagtas-Bayangos, Marketing Communications Manager, for a fantastic weekend afternoon at the Long Bar.

The Long & Short Of It: A Power Lunch at Raffles Makati's Long Bar

$

A quick lunch with a little more punch. A real power lunch. And here's the long and short of it: order a la carte or go for the set menu, either way, you'll feel like a boss at Raffles Makati's Long Bar.

The Long Bar launches The Long & Short Of It, the Long Bar's power lunch from 12nn to 3pm, Mondays to Saturdays, offering a la carte and set menu dishes consisting of international classics and reinvented pub favorites. The Long Bar's rich history from its colonial past adds a sophisticated elegance and vibe, and nobody does a power lunch like the Long Bar. Have some cocktails along with your lunch, and complete your Long Bar experience (see more of Long Bar's signature cocktails and bar chow here at http://dude4food.blogspot.com/2013/06/another-round-at-raffles-makatis-long.html).

The Raffles and Fairmont Lobby, with its elegant interiors, welcomes you to its equally elegant dining outlets, including the world famous Long Bar, home of the famous Singapore Sling. Just the place for a real power lunch, for those days when the usual lunch just won't cut it. And discarding those peanut shells on the beautiful tiled floors is quite a power trip...only at Long Bar.

To start things off, we sampled the Long Bar's appetizers, including the Fried Duck Rolls (P 900), served with ginger plum sauce and a side of fresh greens drizzled with balsamic. Large, crisp spring rolls that look like your regular spring roll...until you take that first bite. Simply...awesome. Rich, tender and savory chunks of duck meat add an indulgent twist on the spring roll, and that's just for starters...

Crispy Rock Shrimp (P 1,000), served with chili mayo, comes next. Large, plump shrimps lightly breaded and fried until crisp, elegantly presented in a glass bowl. The chili mayo has a nice cooling heat for that extra kick, and the creamy texture adding a nice contrast to the crispy shrimps. Another winner...as I go for the last piece of shrimp.

A second serving is served, and a light mist forms around the hip glass bowl, with the shrimps arranged immediately from the fryer so you get it at its peak crispness, as more starters arrived...

And to balance your meal, add some of Long Bar's signature salads, like the Cobb Salad (P 500), a medley of baby corn, lettuce, tomato, egg, blue cheese and a classic vinaigrette...

...The Long Bar Salad (P 700), a mix of Romaine lettuce, lolo rosso, cherry tomato, artichoke, baby carrot, pumpkin seeds, pine nuts with a sweet and tart calamansi dressing...

...or the Classic Caesar Salad (P 550), crisp lettuce dusted with parmesan with strips of prosciutto for an added kick in flavor. As we worked on the salads, the mains arrived...a variety of different dishes from international favorites to inventive dishes fit for a proper power lunch.

Lapu-Lapu "A la Meuniere" (P 800), tender fillet served over roasted potatoes and lemon butter parsley sauce. Tender fillet of grouper draped in a rich butter sauce, topped with a refreshing side of mixed greens. A light dish, and a cool non-meat option, the freshness and premium quality of the ingredients are evident in each bite.

The Long Bar Burger (P 600), premium all-beef patty topped with lettuce, tomatoes, fried onions, tartar sauce and bacon, served with french fries and corn relish on a rustic wooden board. Maybe its the wooden board, or the way the bacon caresses the patty, or both...this is one sexy burger.

The combination of flavors and textures on a single bun makes this another must try at the Long Bar, perfect with a cold beer. Or a nice Panutsa Old Fashioned, my drink of choice at Long Bar.

The Ploughman's Platter (P 1,000), a selection of blue cheese, Gruyere and brie, with pork, ham, beef and turkey pastrami, served with a freshly baked baguette, beautifully laid out on a wooden chopping board.

The combination of cured meats and premium imported cheeses make this simple yet indulgent meal another must try. Light, yet full of flavor, the perfect meal when negotiating a deal or making important decisions over lunch. You are, after all, in the company of movers and shakers of the business world, the Long Bar's usual lunch crowd. Pair this with wine, or one of Long Bar's many cocktails, and you have a perfect power lunch.

Pulled High Pork Sandwich (P 600), tender lechon, lettuce, tomato and Hoi Sin mayo on sourdough bread. Finally, lechon in a sandwich...I've always thought lechon would make a real cool sandwich, and this does not disappoint. Different, yet familiar, with that unique Long Bar touch.

Majestic Ham Croque Monsieur (P 700), local Majestic Ham with gruyere cheese and bechamel sauce on rye bread. A cool take on the French grilled ham and cheese sandwich, using the local Majestic Ham for that flavorful punch. The Majestic Ham's rich, sweet and salty notes complement the creamy gruyere and bechamel combo for another light yet elegant sandwich.

Long Bar B.L.T. Sandwich (P 500), crisp bacon with romaine lettuce, roasted tomato and garlic mayo on ciabatta bread. I've said it before, and I'll say it again...just can't go wrong with bacon.

Steak Frites (P 900), Wagyu flank steak served with french fries and mushroom pepper sauce on a wooden board. Real beef for a real power lunch, my personal favorite. Grilled to your preference, I go for a medium rare, with a juicy pink center. Simply spiced with just salt and pepper, and topped with chopped parsley, the beef flavor really comes through. Peppercorns and rock salt are sprinkled on the wooden board,  enhancing the beef flavor, and the side salad provides a refreshing contrast to the richness of the beef. the fried complete the dish. Nothing like freshly made fried straight from the fryer, with a light crisp outer layer. Note the miniature bottles of Heinz Catsup and mayo for the fries...

No power lunch would be complete without an equally decadent dessert, like The Long Bar Cheesecake (P 300), elegantly plated, and tastes as good as it looks. Rich and creamy, like a New York style cheesecake without any topping, the way I like my cheesecake. The fresh berries add the finishing touch, providing a delicious tartness to the rich cheesecake. A great dessert with with a good cup of brewed coffee.

Warm Apple Crumble with Vanilla Ice Cream (P 300), a comforting and homey dessert. As the scoop of vanilla ice cream melts on the warm apple crumble, each spoonful becomes a rich medley of flavors. The contrasting warmth and cool ice cream also add to the play of flavors, another winner.

Mango & Coconut Trifle (P 300), rich, sweet and and creamy with cool tropical flavors.  The fresh sweetness of the mangoes work well with the creamy coconut trifle, and after trying the previous desserts, it's nearly impossible to choose just one.

Bread & Butter Pudding with English Toffee Ice Cream (P 300), another comforting an homey dessert, rich and creamy and another flavorful combo of warm pudding and ice cream. I'd probably go to the Long Bar just for this sweet treat and a cup of coffee. Seriously good.

Another hot latte after the power lunch, cocktails and dessert...

Loni Balagtas-Bayangos, Raffles and Fairmont Makati's dynamic Marketing Communications Manager, shares the concept behind Long Bar's The Long & Short Of It with the group.

The happy and satisfied group after an epic power lunch. Definitely one of the best weekends yet, and once again, another memorable experience at Long Bar. You can go for Long Bar's Set Menu at P 995++ for a choice of one appetizer (Cobb Salad, Classic Caesar Salad, or Gratinated Onion Soup) and main course (Long Bar Burger, Pulled High Pork Sandwich or Reuben Sandwich) or go a la carte. Whichever you choose, you'll feel like a boss with Long Bar's power lunch offerings. Special thanks to Loni Balagtas-Bayangos for an awesome power lunch. The Long & Short Of It, simply one of the best.

Just when you thought the Speculoos Cookie Butter craze was over...it's now in your favorite doughnut.

The newest additions to Krispy Kreme's Delectable Desserts line, Krispy Kreme's Speculoos Cookie Butter Doughnuts are a perfect match, worthy additions to the indulgent Salted Caramel and Creme Brulee doughnuts. Now you can have your Speculoos fix with your favorite doughnut.

Imagine my surprise when this package arrived, a dozen of Krispy Kreme's newest Delectable Desserts Speculoos variants, including the Original Glazed Doughnut with Krispy Kreme's signature "melt-in-your-mouth" texture that sets it apart from other doughnuts. Awesome.

The two new Speculoos Cookie Butter variants include the Dark Chocolate Vanilla Cookie Butter (L), a vanilla cookie butter kreme-filled doughnut dipped in dark chocolate with a crisp French biscuit topping; and the White Chocolate Vanilla Cookie Butter (R), dipped in rich white chocolate and topped with Belgian chocolate chips and caramel crunch.

The White Chocolate Vanilla Cookie Butter offers a sweeter punch with its rich white chocolate, and the Belgian chocolate chips and caramel crunch add more layers of flavor and texture that combine well with the Speculoos filling. This will definitely leave you smiling long after your last bite. The Dark Chocolate Vanilla Cookie Butter has a deeper, not so sweet flavor that just punches through, and the crisp French biscuit topping has that nice hint of cinnamon for a delightful blend of flavors. And the Speculoos filling simply rounds out the flavors for a cool sugar rush. Great with cup of coffee, any time of day, and see yourself smile after every bite. Hungry? Krispy Kreme's Speculoos-inspired creations are available only until July 31, so better hurry...seriously.

A Steak, Pork Belly and One More Mojito at Agave Mexican Cantina

$

One more mojito. You just have to go for one more mojito to make it a proper Mexican lunch. And at Agave Mexican Cantina, you can have your mojito, and more...

Now with three branches, Agave Mexican Cantina offers classic Mexican dishes including signature Mexican cocktails to go with your meal, including local and imported beers. And there's nothing like a cool mojito or margarita for a late lunch on a hot sunny afternoon.

Try something different for lunch, like Agave's Strawberry Margarita (P 175 glass/P 495 Pitcher), fresh strawberries blended with Agave's original frozen margarita in a sugar-rimmed glass.

Or go for a soothing Strawberry Mojito (P 185), a refreshing fresh fruit and mojito blend, with the right sweetness and bite. Minty, tart, and sweet, a surprisingly different mojito that just seems right for a laid-back lunch.

Agave's popular appetizers arrived, starting with the Chipotle Buffalo Wings (P 355), glazed with Agave's tangy chipotle and served with a cool ranch dressing. Not as crisp or crunchy as the usual wings, but just as flavorful. Tender and moist, and the unique chipotle glaze adds a richness to each bite.  And great with one more mojito. Maybe a Coconut Mojito...

Mini Taco Sampler (P 295), miniature 4-inch tacos filled with Agave's popular taco toppings: grilled chicken, pork carnitas and taco beef, all in one platter. Great for sharing, and everyone gets a taste of the different taco variants at Agave. The beef tacos were my choice, with bold. beefy flavors.

Then the mains arrived. Arroz a la Tumbada (P 425), a Mexican version of paella with shrimp, calamari, chicken, pork and cream dory served on Mexican red rice and a rich and flavorful chili-tomato broth. Squeeze a little lemon for a rich medley of flavors. Not too spicy, but there is a gradual heat that builds, adding another layer of flavor to every bite. The rice is soft and moist, and you simply can't stop after just one spoonful.

Carne Asada (P 615), tender imported US steak grilled to your preference, with grilled pepper sauce and served with Mexican red rice, a refreshing pico de gallo and rich guacamole. I go for a medium rare, with a juicy pink center.

The steak was perfectly cooked, tender and juicy, and the mild grilled pepper sauce enhances the beefy flavor without overpowering the meat. The red rice was soft and moist, and combines well with the pico de gallo and guacamole. A personal favorite.

And finally, the Pork Belly Grande (895), crisp and tender pork belly served with fresh cucumbers, tomatoes and shredded lettuce with three sauces and tortilla wedges. Add a slice of pork belly, including a piece of crisp crackling, cucumber, tomato and the chili sauce to a tortilla wedge and roll it up. Almost like a Mexican version of Pritchon, and another cool dish for sharing. From starters to mains, and a few more rounds of mojitos, Agave Mexican Cantina is one cool place for a mojito lunch. One last round of mojitos? Why not.

Agave Mexican Cantina is located at Building B3, Bonifacio High Street, Fort Bonifacio, Taguig or call 403-6003 and 403-5865 for inquiries.

Singapore's Yummy Soy, Now at The Fort

Chilled Bean Curd or Soy Milk? Why not have both...

Yummy Soy is the latest brand to enter the local market, offering a full line of Chilled Bean Curd and Soy Milk products, in a variety of flavors and add-ons. A Singapore-based brand, Yummy Soy is a welcome addition to the local food scene, with its fresh and quality soy products.

What started out as a bold idea of "creating a new soy taste for the new generation" has blossomed into numerous stores in Singapore, including two stores in Manila. All of Yummy Soy's products are made fresh daily, with its fresh on-demand system using the finest ingredients.

We sampled Yummy Soy's Chilled Bean Curd products, in both Original and Flavored variants, including Almond, Strawberry and Dark Chocolate. Other flavors include Hazelnut and White Chocolate.

The Original Chilled Bean Curd is great as is, silky smooth with clean flavors. Like the familiar taho, Yummy Soy's Original Chilled Bean Curd is lighter in color, with a more subtle flavor which I enjoyed. The fine and delicate texture of the bean curd melts in your mouth releasing a subtle sweetness. The Dark Chocolate Chilled Bean Curd has a rounder, deeper flavor note, also great as is.

You can also include some of Yummy Soy's add-ons to your chilled bean curd, including pearls (P 10), coffee jelly (P 10), grass pearls (P 10) and strawberry pop (P 15). The Chilled Almond Bean Curd  topped with tapioca pearls is a popular variant, with the pearls adding some bite to the chilled bean curd. Like all of Yummy Soy's products, the flavors are clean and very subtle.

For a different yet familiar flavor, go for the Chilled Almond Bean Curd topped with Coffee Jelly. Each jelly bursts with coffee flavor that complements the sweet almond bean curd.

If you prefer something sweeter, the Chilled Strawberry Bean Curd topped with Strawberry Pop is the one for you. And the strawberry pearls really pop, releasing a tart and sweet strawberry flavor, a sure hit with the kids.

We also sampled Yummy Soy's Soy Milk line, including the Original with tapioca pearls (P 65 Regular/P 75 Large, plus P 10-P 15 for add-ons), Almond with Coffee Jelly, Strawberry with Strawberry Pop and Coffee with Coffee Jelly (P 75 Regular/P 85 Large for flavored variants). Other cool flavors include Tiramisu, Hazelnut, Toffee Nut, Dark Chocolate, White Chocolate, Strawberry, Mango and Caramel.

The different flavors and add-ons should satisfy any soya craving, and you can have it chilled or hot. And with the known health benefits of soya, it's a win-win situation. Let's see, toffee nut with coffee jelly? Or just a chilled Hazelnut bean curd? Or both? Why not.

Yummy Soy is located at The Fort Strip beside K-Pub. Visit their Facebook page at www.facebook.com/YummySoyPH for more information.

A Burger Lunch at Wine Depot Cafe

$

After getting your favorite red, why not have a burger?

At the far end inside Wine Depot, after the wine racks and past the chiller is Wine Depot Cafe, offering some of the best burgers in the metro, and one of the little known secrets this side of Makati.

With branches in Makati, Greenhills and Alabang, Wine Depot offers an impressive line of premium wines, the very best from Europe, South America, Australia and the US, along with imported cheeses, cured meats and other gourmet deli products, all in one place.
As you walk past the shelves and wine racks, one takes a virtual tour of the world's wine regions, with labels from France, Italy and Spain neatly arranged and displayed, along with more labels from Australia, Napa Valley and Chile. It's all here. Seriously.

But there's more. Inside Wine Depot, you'll also find Wine Depot Cafe, offering some of the best coffee, desserts, mains, appetizers and gourmet platters. In fact, the menu offers the popular retail items of Wine Depot, so you know you're getting the good stuff. To give you a better idea of what's available, a wall is creatively transformed into a giant menu. And Wine Depot Cafe continues to surprise...

The spacious interiors is both modern and rustic, casual and relaxed yet one feels a subtle elegance with Wine Depot Cafe's zen-like spartan look giving it a cool vibe.

On the table, one is reminded of Wine Depot's wine business, with recycled wooden wine crates to hold condiments. It's subtle touches like this that make dining at Wine Depot Cafe special and different.

Wine Depot Cafe also has a cool garden area for al fresco dining, or afternoon tea. But the afternoon rains had other plans, maybe I'll have my burger in the garden some other time...

After a long decision process going through Wine Depot Cafe's cool menu on the wall, I go for Wine Depot Cafe's Lamb Burger (P 420), premium Australian lamb grilled to medium rare perfection and served on a freshly baked ciabatta, with thick-cut country style fries, mint jelly and garlic mayo dip. And one bite tells me immediately I made the right choice.

The lamb is tender and juicy, and the house-baked ciabatta has a nice crisp outer layer that pairs perfectly with the patty. Simple yet rich, meaty flavors on a freshly baked bun, proving once again that simple dishes using the best ingredients will always deliver the most flavorful and satisfying dining experience. This one definitely goes on my list of top burgers.

Wine Depot Cafe also offers a premium beef burger, the Wagyu Beef Burger (P 420), served with thick-cut country fries, coleslaw and garlic cream dip with Wine Depot Cafe's signature ciabatta.

For dessert, go for the rich and indulgent Belgian Chocolate Mousse (P 190), a thick, moist and creamy slice of pure chocolate bliss.

Pair it with Wine Depot Cafe's Latte Macchiato (P 110), served with premium honey from Australia and a chocolate-dipped biscotti. Perfect. And the best part? All this in one cool place.

I also got to sample a special iced tea prepared with Wine Depot's La Maison Du The, a premium French handcrafted tea (more on this in a future post), as Wine Depot continues to surprise.

An afternoon High Tea at Wine Depot? Sounds cool. Stay tuned for my next post on Wine Depot's High Tea Wednesdays with La Maison Du The...

Ready for High Tea? But ditch the fancy hats. No silver trays or porcelain cups too. It's a cool and casual afternoon tea at Wine Depot Cafe's High Tea Wednesdays with La Maison Du The.

Known for its signature Vittorio coffee, made from 100% Arabica beans, Wine Depot Cafe adds another signature blend to its repertoire of premium brews with La Maison Du The. And at Wine Depot Cafe's High Tea Wednesdays, you can enjoy the luxurious tea blends from La Maison Du The with an assortment of meat and seafood rolls, fresh fruit tarts, homemade cakes and comforting pies.

La Maison Du The is a premium handcrafted French Tea blended and packed by one of the oldest tea blenders in Paris. La Maison Du The is available in the following classic flavors: Green Tea from China, English Breakfast, Darjeeling from India, Earl Grey, Chamomile, Lemon and Ginger, and Peppermint, each refreshingly different and unique.

The delicately handcrafted teas are hand torn, and their original loose leaf form allows for the optimum infusion of flavors in every cup. Brewed in a pot, or in individual bags (not just any tea bag, but a silk mesh bag), tea connoisseurs will surely enjoy the richness of La Maison Du The teas.

Wine Depot Cafe hosted an afternoon tea for the launch of High Tea Wednesdays, showcasing the full range of teas from La Maison Du The. Wave 89.1's Jada and Wine Depot's Monette Atilano, Marketing & Comunications Manager, welcomed the press and bloggers, as Wine Depot's Michelle prepares some cool tea-based drinks, including spiked blends. Nice.

We were also served an assortment of savory treats to be paired with tea, including grilled chicken skewers and prosciutto with olives and pepper, beef and chicken rolls and smoked salmon on crostini.

The light snacks offered a variety of flavors that go well with La Maison Du The's different tea flavors and variety of light snacks combine for one real cool afternoon tea. Needless to say, I'm really liking this high tea ritual...

I go for La Maison Du The's Darjeeling tea. The rich, bold flavors of Darjeeling has a subtle fruity hint for a layer of sweetness that pairs well with the savory snacks, and the sweet desserts soon to follow.

Along with the teas, we also sampled some of Wine Depot Cafe's desserts prepared specially for High Tea Wednesdays, presented on a cool wooden board.

You too can enjoy High Tea Wednesdays at Wine Depot Cafe, available every Wednesday from 3pm to 5pm, and experience an emerging tea culture. For only P 500, you can have a hot pot of La Maison Du The (choose among seven flavors), and a selection of savory and sweet treats including sausage rolls, salmon rolls, chicken pastys, cheesecake, Lamington, and fruit tarts. Reasonably priced and even more affordable than other similar offerings, Wine Depot Cafe's High Tea Wednesdays is a pretty cool deal. And with La Maison Du The's elegant and premium blends, it's a very good deal.

You can also have some of Wine Depot's signature desserts, including assorted cheesecakes and pastries. Just head down Wine Depot Cafe's chiller to see what's available.

Or why not go for an alcohol-infused tea, made with La Maison Du The's English Breakfast tea with triple-sec and grenadine. A Late Afternoon Food Crawl at W Global Center

Three restaurants. One afternoon. One simple game plan. It's a late afternoon food crawl at W Global Center...

With five distinct restaurants conveniently located right beside each other at the ground floor of W Global Center (all managed by Global Restaurant Concepts), an afternoon food crawl is not only convenient and easy, it's fun too. The game plan was simple. Sample a few signature dishes from one resto in an unhurried and relaxed pace, before heading to the next one just a few steps away.

A good salad is always a great starter, and Mad for Garlic's Caprese Salad (P 625), rich and creamy buffalo mozzarella with juicy fresh tomatoes in a flavorful basil dressing is the opening dish in an epic afternoon food crawl. Light yet full of flavor, it's an excellent starter.

We proceed with a second salad dish from Mad for Garlic. one with its signature fried garlic flakes, the Fresh Spinach Salad (P 265), generously covered with thinly-sliced, crisp, fried garlic and a balsamic vinaigrette. Refreshingly different, and if you enjoy crucnhy garlic (who doesn't?), you'll enjoy this.

After the initial salad dishes, we then walk a few steps to P.F. Chang, and immediately go for the Chicken Lettuce Wraps (P 395). A spoonful of the tasty chicken, some crispy noodles on fresh lettuce, and roll away. The flavorful chicken and crisp noodles and lettuce add layers of flavors and textures in every bite, a light starter and a must try at P.F. Chang.

Wonton Soup (P 380), simple, fresh, clean flavors in a bowl, served steaming hot with mushrooms and vegetables. One order is good for four, perfect for sharing.

Steamed Pork Dumplings (P 165), soft, delicately flavored dim sum, a perfect dish for an afternoon food crawl. No mid-afternoon food crawl is complete without some dim sum.

Crispy Pork Wontons (P 165), another light dish, deep-fried to crispy perfection, served with a sweet chili sauce.

Sichuan Style Asparagus (P 290), spicy, stir-fried asparagus with a tasty crunch. The freshness of the asparagus is immediately evident at the very first bite, with a delicious crispness complemented by a sweet and spicy sauce.

Crispy Honey Shrimp (P 475) fried shrimps with a sweet honey glaze, served on crisp noodles, another cool combo of flavors and textures.

After P.F. Chang, the thought of butter pecan and bacon lured me to IHOP.  IHOP's Original Belgian Waffles with two eggs sunny side up and two crisp strips of bacon (P 285). Nothing like breakfast in the afternoon, without the long lines. A perfect ending to a cool afternoon food crawl.

Mad for Garlic, P.F. Chang and IHOP. A variety of culinary styles and flavors, all conveniently beside each other. California Pizza Kitchen and Gyu-Kaku are also located in W Global Center, so you have even more choices for your very own food crawl. A mid-afternoon food crawl lets you sample different dishes, without the usual meal time crowd. And W Global Center has it all.

Mad for Garlic, P.F. Chang and IHOP are located at W Global Center, 9th Avenue corner 30th Street, Bonifacio Global City, Taguig.

Black on Black: Brothers Burger's Black Angus Burger on a Black Bun

Black Angus on a black bun...definitely different.

In celebration of Brothers Burger's 14th Anniversary, selected stores will be offering the all-time favorite, the Angus Burger (P 280), on a special toasted oatmeal topped black bun. The black bun adds a distinct premium look, and doesn't anything in black just look a lot sexier?

Prime and juicy US Angus beef patty with crisp, farm fresh lettuce and tomato, cheese and a unique bun for a special anniversary treat that's really different, and big on flavor.  The premium, limited run black buns provide the perfect platform for Brothers Burger's Angus beef.

The warm toasted bun is light, absorbing the richness of the patty, and the subtle sweetness of the bun enhances the beefy flavor. Made from bamboo (yes, bamboo), the bun's soft and chewy texture is noticeably  different, yet plays well with the premium beef.  And the best part? The bread doesn't crumble or fall apart, remaining firmly wrapped on the premium patty all the way to the last bite.

But you better hurry. You can enjoy this sumptuous treat only until July 31, 2013. Black on black? Definitely. Here's to fourteen years of burger love from Brothers Burger...

Brothers Burger is located at Unit 102, Millennium Place, Meralco Avenue, San Antonio, Pasig. or call 756-5656 for deliveries.

A Chicken and Steak Lunch at Bugsy's Bar & Bistro

$

I've always been fascinated with mobster movies.  Inside Bugsy's Bar & Bistro, one finds a wall with framed black & white prints of notorious underworld figures, from Lucky Luciano, Al Capone and Bugsy Siegel. Even a print from the classic Godfather film, nicely complementing the dark wooden chairs and tables like the speakeasies of the prohibition-era. Lunch was definitely going to be interesting...

It all started in 2007 when a group of friends thought of opening their very own bar. Inspired by prohibition-era speakeasies, they called it Bugsy's, named after Benjamin Siegel, a prominent underworld crime boss, and the man behind Las Vegas. What started as a fun idea among friends has now blossomed into three branches. Great food at reasonable prices works all the time, even Benjamin Siegel would have to agree.

My lunch begins with Marco's Honey Garlic Wings (P 185 Solo/6pcs), perfectly fried wings covered with a sweet honey garlic sauce. The sweet glaze blends well with the crisp wings, and yes, do use your hands for this. A perfect starter, great with a cold beer.

Then, my main course arrived. The Bugsy Siegel (P 695), USDA Angus ribeye (minimum of 400 grams) served with mashed potatoes, green beans and red wine sauce.

For the price, I was impressed with the size of the steak. Bugsy's Bar & Bistro guarantees a minimum of 400 grams, and you get real value for money. I go for medium rare, and it's great as is. Seasoned with just salt and pepper, you really don't need anything else. The mashed potatoes are real, with real chunks, and the rough mash is rustic and comforting. A pretty decent steak, and great value too.

A chicken and steak lunch at Bugsy's...come heavy and get ready to whack a pretty good meal at Bugsy's Bar & Bistro.

Bugsy's Bar & Bistro is located at Unit C-105, Citygolf Plaza, Julia Vargas Avenue, Ortigas, Pasig City or call 489-4985 for inquiries.

Yaku Japanese Grill: Authentic Yakitori at The Podium

Authentic Japanese dishes at affordable prices. And for the past thirteen years, Yaku Japanese Grill has been doing just that.

One of the pioneer outlets since the opening of The Podium back in 2000, Yaku Japanese Grill continues to serve authentic charcoal-grilled yakitori specialties, remaining true to its name ("Yaku" literally means "grill") along with other popular Japanese dishes including sushi and sashimi, donburi, teppanyaki, tempura, udon and soba. Plus a selection of sake and Japanese and local beers to go with your favorite yakitori. Recently, we sampled some of Yaku Japanese Grill's specialties, starting with some sushi...

The Spicy Tuna Maki (P 155), sushi with a bite. The spiciness is not immediately felt, but each succeeding bite gradually builds up the heat. If you enjoy a spicy kick with your sushi, this one delivers.

Ebi Tempura (P 249) and Yakimeshi, Japanese style fried rice (P 55), a perfect pair and a meal in itself. Yaku's tempura is delicately crisp and light, just the way tempura should be.

The Yaku Platter (P 205), with an assortment of Yaku's grilled yakitori including Negima (chicken with onion leeks), Okura (grilled okra), Uzura (grilled quail eggs), Asparamaki (grilled asparagus wrapped in bacon), Butabara (grilled pork belly), and Gindara (grilled cod fish topped with ponzu oroshi). You can also order ala carte and choose from 18 authentic yakitori favorites. A cold Kirin and some yakitori, just perfect.

Seafood Teppanyaki (P 289), assorted seafood and vegetables with a sweet sauce. the freshness of the seafood and the vegetables make this dish another winner, with the tender seafood blending with the subtle crispness of the veggies for a cool play on textures and flavors.

Tuna Teriyaki (P 245), tuna fillet with leeks, tofu and a sweet sauce. It's simple dishes like this that make you appreciate the quality ingredients used in every dish at Yaku.

Sizzling Kaki (P 309), breaded oysters served with leeks, onions and carrots on a sizzling hot plate topped with sesame seeds. The generous helping of fresh vegetables completes this dish.

Kisu Furai (P 195), breaded sillago fish, simply seasoned and deep-fried and topped with garlic with a side of shredded cabbage. The simplicity of the dish and the subtle, clean flavors of the fish makes this another winner.

Enoki Foilyaki (P 175), winter mushrooms wrapped in foil and cooked with rich butter, mirin, ponzu and bonito flakes. Unwrap the foil to release the buttery aroma of the tender mushrooms, and just go right in. A simple dish with subtle yet rich flavors, and refreshingly different.

Agedashi Nasu (P 115), a refreshing twist replacing the usual tofu with breaded eggplant, and works quite well. Light, healthy and refreshing, with mild flavors, a cool side that pairs well with Yaku's other dishes.

And there's dessert too. Yaku's Coffee Jelly (P 69) and Wasabi Ice Cream (P 65) are just perfect to cap any meal.

Different, with the sweet notes complimenting a muted wasabi hint. Nice.

The extensive variety and range of Yaku Japanese Grill's menu is impressive, and the service is efficient and courteous. And the secret behind Yaku Japanese Grill longevity is great, authentic food at friendly prices. Works all the time.

Yaku Japanese Grill is located at the 3rd Floor, The Podium, 18 ADB Avenue, Wack Wack, Mandaluyong or call 687-5368 for inquiries.

Ganso-Shabuway rolls out a selection of new dishes to go with their signature shabu-shabu, from appetizers, side dishes and rice bowls. More reasons to drop by Ganso-Shabuway, with its fourth branch now open at the new Shangri-La East Wing.

Ganso-Shabuway, known for its Japanese style hot pot cuisine using authentic and premium ingredients, introduces a whole new line of dishes. Now you can enjoy your favorite shabu-shabu with Ganso- Shabuway's new appetizers and side dishes.

Established in August 2004 with its very first branch located in San Mateo, California, Ganso-Shabuway's gradual  expansion to Asia includes four stores in Metro Manila. The name "Shabuway" roughly translates to "the road to shabu-shabu for shabu-shabu lovers," and true to its name, Ganso Shabuway offers a wide and diverse selection of original and shabu-shabu set menus with premium Meyer Natural Angus beef, Kobe beef, Kurobuta Pork, USDA Choice Angus beef and Wagyu beef, with a choice of traditional seaweed or spicy miso broth (or you can have both with Ganso-Shabuway's "Half & Half" serving).

Light and flavorful, we sample the first of many new dishes, starting with Ganso-Shabuway's Nasu Miso Itame (P 338), tender eggplant glazed with sweet miso sprinkled with sesame seeds on a bed of silky tofu. The delicately cooked eggplant's subtle flavors is punctuated by the miso sauce, as the tofu absorbs the rich flavors, an excellent starter to any shabu-shabu meal.

Next, Beef Gyoza (P 228), crisp pan-fried dumplings with a savory filling of beef, pork, mixed vegetables and mushrooms...

...and Beef Wonton (P 228), deep-fried wontons with beef, pork, vegetables and mushroom filling, both served with a sweet dipping sauce.

Chicken Karaage (P 258), marinated crispy and breaded fried chicken served over squash. Served without any sauce, the marinated chicken is richly seasoned, all you need is a squeeze of lemon. Crisp and flavorful, and the sweet fried squash pairs perfectly with the chicken.

Tuna Belly (P 338), tender tuna belly glazed with a flavorful garlic butter yakiniku sauce, a personal favorite. the rich garlic butter sauce adds a delicious layer of flavor to the fresh, subtle sweetness of the tuna belly. Enjoyed as is, or with rice, this one's a winner.

Ebi Fry (P 388), crisp prawn tempura served with fresh mixed greens and dipping sauce. Perfectly crisp and crunchy, with a contrasting texture that pairs well with any shabu-shabu meal.

Ebi Curry (P 388), crisp prawn tempura served over steaming hot rice topped with homemade curry sauce. A meal in itself, the dish provides a cool blend of flavors and textures. The rich curry sauce isn't too spicy, but there is a refreshing kick.

Beef Curry (P 358), tender USDA Angus beef served over rice topped with curry. If you enjoy beef and curry, this dish is definitely for you. A comforting dish, with familiar flavors.

Beef Yakiniku (P 358), USDA Angus beef over rice with yakiniku sauce and topped with sesame seeds. Savory beef on rice, just can't get better than that.

Shabuyaki, Ganso-Shabuway's newest shabu-shabu dish, fresh vegetables and glass noodles in a sweet broth enriched with sake with your choice of meat. Almost like sukiyaki, hence the name, the new shabu-shabu dish is refreshingly familiar yet different. The new dish will be available staring next week.

Quick Bites: Afternoon Tapas at Casa Armas

Sometimes you just need to slow down. The world won't stop if you suddenly shift to a lower gear, and sometimes it's all you need to face another challenging day ahead. And some tapas wouldn't hurt too...

Casa Armas first opened in 1995, situated in the narrow alleys of Malate. Word then quickly spread about the authentic Spanish dishes of Casa Armas, including the near legendary Cochinillo. Now with three locations, Casa Armas continues to serve authentic Spanish cuisine to a new generation. And the vibe, and the food, remains exactly as I remember it. Chorizo Frito (P 285), Spanish chorizo fried in olive oil. Rich, concentrated flavors, simple yet comforting. Great with a cold beer.

Alcachofas con Jamon (P 280), artichokes and premium ham in olive oil. The mild flavors of fresh, tender artichokes play well with the sharp and distinct salty notes of the ham balanced by the nutty olive oil.

And since you already have a table, why not go for a paella to complete your dining experience. Paella Valenciana (P 865 Whole, P 555 Half), with pork, chicken, seafood and vegetables.

Sometimes taking it slow is all you need. Then and now, there's no better place to take things slow than Casa Armas.

Casa Armas Tapas Bar y Restaurante is located at the Ground Floor, The Podium, 18 ADB Avenue, Wack Wack, Mandaluyong or call 687-3370 for inquiries.

Diplahan Lechon: The Best of Mindanao Lechon, Now in Manila

$
0
0
There's just something so cool about discovering new things, like experiencing and tasting the subtle regional nuances in something so familiar and ubiquitous as the lechon. And just when you thought you've tasted every lechon variation, here comes yet another regional specialty from way down south that offers yet another new flavor, and another perspective on the native lechon.

No real feast can be considered truly Filipino without lechon, and our regional diversity adds a culinary richness to this all-time favorite. And in the municipality of Diplahan in Zamboanga, comes a unique version of lechon perfected by generations of the best local lechoneros. And true to its name, Diplahan Lechon offers  a taste of the region's best kept secret.

Diplaham Lechon's secret lies in the meticulous preparation, draining, and roasting of the pig resulting in tender, moist meat with a layer of perfectly crisp skin. The pig is stuffed with lemon grass and secret herbs and spices that give it a distinct richness in flavor, so rich you don't really need any sauce or condiment like the more common and familiar lechon of Luzon.

The slow roasting process is tedious and laborous, as the pig is manually turned based on the experienced eye of the lechonero. The lechon is then basted with a marinade of secret herbs and spices during the roasting process, adding to the layers of flavors.

As the lechon is slowly turned, the intense heat from the charcoal adds yet another layer of flavor. Patience is definitely key, and this is slow food at its best. A few cold beers should help settle you down...

And as the day slowly fades, the lechon is finally ready. Bong, Diplahan Lechon's master lechonero, prepares to chop some prime cuts, starting with the belly, where all the flavors of the stuffing, including the lemon grass and a variety of herbs and spices, are concentrated.

Fresh from the charcoal pit, the moist, tender pork belly and crisp lechon skin is then served. Immediately, one notices that each slice is incredibly moist, as the aroma slowly fills the room. I down another beer to restrain myself from diving right in...

The richly flavored lechon is great as is, but if you're looking for a condiment, then a specially blended vinegar is the way to go. The sweet and sour vinegar has a deliciously sharp and distinct note that contrasts with the richness of the lechon, the way they do it in the town of Diplahan. The regional style and flavor is definitely different and unique, one of the best lechons I've tried.

A few chunks of pork belly with a layer of crisp skin, paired with steamed white rice and vegetables...just can't get any better than that. Unlike other lechons, Diplahan Lechon's crisp outer skin is thin and light, with just a thin layer of fat for that buttery flavor.  At one point, my eyes were closed while enjoying the tender, moist pork and the deliciously crisp skin...but no worries, it's a pretty common reaction to pure pork bliss.

Each tender chunk of lechon is perfectly seasoned without overwhelming the subtle flavor of the pork, with just the right amount of saltiness. Each bite then slowly releases the flavors of the secret herbs and spices, as well as a refreshing hint of lemon grass.

Halfway through the meal, our hosts at Diplahan Lechon deep-fried the remaining lechon skin for a plate of incredibly crisp cracklings that paired well with the special vinegar blend. Another round of beer? Definitely.

Sampling Diplahan Lechon was an experience that ranks way up there, and proof of our rich culinary heritage and diversity. To the staff of Diplahan Lechon, Bravo...and my sincere thanks for bringing the best of Mindanao closer to home.

To order Diplahan Lechon, simply call Carol at 0917-826-8010 or Wee at 0917-826-8017. You can also check out Diplahan Lechon's Facebook Page at facebook.com/Diplahan Lechon.

A Weekend Lunch at Gloria Maris Shark's Fin Restaurant in Greenhills

There is an old Chinese saying that goes "preserve the old, but know the new", and this seems to describe the extensive Cantonese cuisine of Gloria Maris Greenhills, authentic dishes that are familiar, and reinvented new classics with a contemporary twist.

One look at the fish tanks lining one entire side of the wall tells you seafood takes center stage at Gloria Maris, with the widest variety of the freshest crabs, shellfish, shrimps and fish. Steamed, fried, or in a soup, the fresh flavors come through with a subtle sweetness.

Lunch begins with a hot soup,Crabmeat Corn Soup with quail egg (P 88/cup), rich and thick, served steaming hot. Familiar and comforting, a classic soup dish loaded with shredded crab, and a drizzle of black vinegar rounds out the flavors.

Gloria Maris also has extensive selection of roasted meats, and one can taste a sampling of their classic bestsellers with the Roasting Combination (P 360), a platter with soy chicken, crisp pork belly and pork asado with century egg and jellyfish, served with ginger and hoisin sauce. A medley of flavors in one plate.

The crisp skin and juicy, tender meat of the pork belly and soy chicken provide contrasting textures, all perfectly roasted and seasoned.

Yang Chow Fried Rice (P 188), loaded with shrimps, pork and vegetables. Each grain is seemingly packed with so much flavor from the various ingredients, and this alone is a meal in itself.

One of Gloria Maris' newest seafood dishes, the Crab with Salted Egg (price depending on weight) is a definite must try. The sweet and juicy crab meat is enhanced by a layer of salted egg, and deep-fried. The flavors are rich and intense, and no dipping sauce needed. traditional, yet new and different.

A Gloria Maris classic. the Lechon Macau (P 268), tender pork with a layer of crisp skin, served with mustard sauce, remains an all-time favorite. The combination of crisp skin and a very thin layer of fat over juicy pork makes this a truly special dish. Extra rice? Definitely.

Another old favorite, Steamed Lapu-Lapu in soy sauce (price depending on weight), succulent whole grouper steamed to perfection topped with leeks and herbs. Tender and flavorful, with fall-of-the-bone goodness.

Taro Puff (110), delicately shaped treats from Gloria Maris' dim sum kitchen, served with sweet chili sauce. One bite brings contrasting textures with a crisp and flaky shell over soft mashed taro. Not the usual ball shaped taro puff, an indication of the dim sum kitchen's playfulness.

And no meal is complete at Gloria Maris without Taho (P 300), hot silky tofu. Add some sweet syrup and tapioca pearls, and memories of countless childhood summers are brought back in every spoonful.

Egg Tarts, rich, sweet and the perfect ending to cap a meal at Gloria Maris. Soft custard on a flaky shell, perfect with hot tea.
