A Spanish Festival of Flavors: Exquisita Comida Espanola at Corniche

It's that time of year when the best of Spain comes to Manila...


Diamond Hotel Philippines celebrates the richness of Spanish cuisine with its Exquisita Comida Espanola, a Spanish Food Festival at Corniche from April 3 to 9, 2017. Read on for a tasty peek of authentic Spanish flavors...


Coinciding with this year's edition of Madrid Fusion Manila, now a much-awaited annual culinary event, Corniche joins the celebration with its own Spanish Food Festival with authentic dishes prepared by Diamond Hotel's new Executive Chef, Francisco Javier Coque, a dynamic Spanish chef with impressive credentials with stints from some of the world's finest restaurants. And just like last year's Spanish Food Festival at Corniche, this year's Exquisita Comida Espanola at Corniche is another must-try dining event at Diamond Hotel (for more on last year's Spanish food festival, see my previous post, Fiesta de Sabores Espanoles: A Spanish Fiesta of Flavors at Diamond Hotel's Corniche).

That afternoon, the staff applied the final touches for the dinner service (L), as Diamond Hotel's new Executive Chef, Francisco Javier Coque (R), made one last round to all the stations for one final check. Not long after, dinner guests began to arrive, and my own memorable Spanish culinary journey at Corniche began...  


...with a refreshing Aguacates con Langostinos y Salsa, the classic shrimp cocktail with its distinct briny sweetness and fresh notes from the avocado and cocktail sauce...


...followed by the classic Mejillones a la Vinagreta topped with a tart pico de gallo.


Start with the Ensalada Mixta, a mesclun of assorted lettuce and vegetables with olives, hard-boiled egg, and tuna belly confit...

...before grabbing a plate loaded with the finest Spanish cheeses including Manchego, Majorero, and Idiazabal, paired with Spanish hams and cured meats like Jamon Iberico, Salchichon Iberico, and Chorizo Iberico. The paper-thin slices of Jamon Iberico offers the classic flavors of Spain with each and every bite...

And there's more, as Executive Chef Francisco Javier Coque presented even more Spanish dishes at the impressive buffet spread. The Pan con Tomate, toasted bread with tomato and olive oil (L) pairs well with the comforting Gazpacho Andaluz (R), a traditional Spanish-style cold tomato soup topped with vegetables.


At the Grill Station, you'll find an assortment of fresh seafood, premium beef and lamb along with savory Pork Chorizo and Spanish Chorizo, ready for grilling...


...simply ask the station chef to prepare a platter with a bit of everything, and it's served to your table fresh from the grill.


The familiar bold and sharp notes of the Spanish Chorizo come through with a flavorful punch, while the milder and delicate notes of the Pork Chorizo lines your palate with a savory richness.


For the mains, Executive Chef Francisco Javier Coque prepared a sumptuous selection of rustic and homestyle Spanish dishes, including the Lapu-Lapu con Salsa Verde Almejas Esparragos, a delicately light yet creamy dish with tender fish cooked in green sauce with white asparagus and clams with its subtle yet rich notes...


...and the comforting Pollo Al Ajillo Con Patatas Panaderas, a savory chicken dish with baked potatoes. The delicate notes of the tender chicken are kicked up by the creamy sauce for even more flavor.


Nothing like the Gambas al Ajillo, Spanish-syle garlic shrimps, to complete your Spanish culinary journey. The plump shrimps deliver a refreshing snap, followed by its briny notes and the nutty hints of garlic. 

More main dishes were featured that evening. Not to be missed are Executive Chef Francisco Javier Coque's Cazuela de Arroz Caldoso con Mariscos, a hearty seafood rice casserole (L) and the Chipirones En Su Tinta, stuffed squid in black ink sauce (R), tasty and flavorful dishes to complement your Spanish feast at Corniche.


Right beside the mains, the impressive Fideua de Marisco, a noodle paella with squid ink and clams, is another tempting dish with the rich flavors of seafood bursting in your mouth with every bite.

At the Carving Station, you'll find some Spanish-style pork love as well, with the Cochinillo Asado, a roasted whole suckling pig stuffed with truffle rice, with tender and juicy pork capped by a layer of crisp skin crackling. And the truffle rice rounds out all the flavors perfectly. One more slice? Absolutely.


One plate...


...followed by another, Executive Chef Francisco Javier Coque's wide selection of Spanish dishes makes Corniche a must-visit during the Exquisita Comida Espanoles Spanish food festival from April 3 to 9, 2017.


Then, there's the usual selection of buffet offerings at Corniche, with its wide array of live food stations serving Japanese, Chinese, Indian, and Filipino favorites.


The Fresh Seafood Station is another favorite at Corniche...


...where you can enjoy the day's freshest catch sauteed with lemon butter and garlic. Perfect.


Cap your Spanish feast at Corniche with an equally impressive spread of desserts, including a selection of indulgent Spanish desserts like the popular Churros Con Chocolate served in shot glasses...


...and the Crema Catalana, topped with fresh fruit. Don't hold back, just go with the flow as Executive Chef Francisco Javier Coque has even more sinful and decadent tricks up his sleeves.

The unique Leche Frita (L), with its contrasting crispy and smooth. velvety texture is another must-try at Corniche's Spanish food festival, served with a tart compote. The sweet Tocinillo de Cielo (R) by Executive Chef Francisco Javier Coque takes you back to countless childhood summers with its rich and familiar notes.


The Arroz con Leche, a soft and creamy sweet rice pudding, rounds out your Spanish culinary journey and is another must-try dish at Corniche's Spanish food festival.


You can also find familiar favorites at Corniche, including homemade ice cream and the do-it-yourself Halo-Halo at the Dessert Station. Sweet. Happy and satisfied, it's another memroble dining experience at Corniche, this time with an authentic Spanish vibe.

Steamin' with the New Steam Pot at Huat Pot

You've tried hot pot before, but have you tried steam pot?


Huat Pot Restaurant adds a new spin to your dining experience with their new Steam Pot style of cooking, using the freshest ingredients right on your table. The latest trend in Taiwan, Hong Kong, and Singapore, steam pot comes to the metro at Huat Pot...


Chef Jonas Ng continues to innovate with the introduction of steam pot table-top cooking at Huat Pot (for more on Huat Pot, see my previous posts, Hot Pot? Make That Huat Pot! and Huat Pot Redux: A Few Tips to Enjoy Your Huat Pot Experience). A healthy cooking method, diners can experience pure and fresh notes with the steam pot for a new flavor experience.

At the special tables, one can't miss the unique table-top steam pot with its glass lid. Once you go for Huat Pot's new Steam Pot (P 688), the staff then prepare the congee at the base of the steam pot. The congee slowly cooks as you steam the fresh ingredients, with its juices slowly dripping to the congee for even more flavor.


For the broth of the congee, simply choose from Huat Pot's signature soup stocks, like the Huat Pot Special, a clear soup; the Sate Soup with its bold BBQ notes, the Chicken Soup, a mild and delicate broth; the Laksa Soup, a rich red curry seafood broth, and the Szechuan Soup, a spicy number with a refreshingly soothing heat. As the congee starts to simmer, the staff then place a special steamer over the congee, topping it fresh vegetables and choice beef and pork before covering it with the glass lid. The steaming process just takes a few minutes, but it's always a good idea to have an ice-cold bottle of beer...

Cooking your own meal right on your table is part of the fun at Huat Pot. And just like their hot pot, the new steam pot has that added element of interactive fun, steaming away to gently cook the thin slices of meat. Lifting the glass lid releases the steam with its mildly fragrant aroma, as the colors of the beef slowly transform...


And it's ready. The freshly steamed beef, along with the vegetables, delivers a mild yet rich savory flavor. Try it first with salt and pepper to taste the pure flavors of the beef, followed by the special sauce of Huat Pot. Each bite of the beef releases light and delicate savory notes. Chef Jonas Ng then shared Huat Pot's new dishes from the A La Carte menu, dishes he grew up with drawing inspiration from his mom's recipes. These tasty and comforting dishes included homestyle staples like the Salted Fish Fried Rice (P 275) with its distinctly sharp and bold notes...


...followed by a pair of simple egg dishes, starting with the Egg with Mayo (P 190), with its blend of textural contrasts and flavors...


...and the traditional Egg with Tomatoes, with the tart notes of the tomatoes weaving its own vibrant flavors to the dish. It's a taste of simple yet real food, and Chef Jonas Ng returns to his roots with his ala carte dishes inspired by his mom's family recipes. 


A pair of stir-fried vegetables were then served, with the Stir-Fry Kuchay (P 160) and the Stir-Fry Kangkong (P 150), tasty palate cleansing dishes with fresh flavors...


...followed by the traditional Braised Beef Sate Chami (P 240), a hearty noodle dish with the savory richness of fork-tender braised beef. Sometimes, the simplest dishes are often the most satisfying, triggering childhood memories with every bite taking you back to simpler times.


Save some of the Salted Fish Fried Rice for the savory Braised Beef Tendon with Radish (P 250), with melt-in-your-mouth beef tendon in a rich sauce...


...and the unique stewed pork dish, Braised Pork with Preserved Vegetables (P 220), what Chef Jonas Ng described as their family's version of "adobo." The richness of the pork is perfectly tempered by the salty notes of the preserved vegetables, and you'll want some extra Salted Fish Fried Rice with this one. Steam pot and comforting homestyle ala carte dishes, Chef Jonas Ng is definitely steaming up with fresh and inventive flavors, enough reasons to go back again at Huat Pot.

Every Thursday, twice a month, Nostalgia Dining Lounge recreates the mood and feel inspired by a period in history, film or literature, adding yet another element to your dining experience. Tonight, it's Mobsters and Molls and the Roaring Twenties at the Nostalgia Dining Lounge...

The Jazz Age, the Age of Intolerance, and the Age of Wonderful Nonsense, call it what you want, the Roaring Twenties left an indelible mark in modern culture. Nostalgia Dining Lounge recreates this iconic period in history with its elegant table settings of fresh petals and sparkling crystal beads, and some pretty good whisky. 


Elegant, dapper...and notoriously dangerous. The staff of Nostalgia Dining Lounge get into the Roaring Twenties vibe, dressed to kill and ready to serve. And twice a month, diners can participate in a whole new dining experience with special themed nights on Thursdays, infusing fun and nostalgia for a memorable dinner. And Nostalgia Dining Lounge has even more themed Thursday nights in store for diners and guests at Oakwood Joy-Nostalg Center Manila.


A refreshing Watermelon Shake gets you in the groove, as a live musical act serenades you with the classics.


Dinner at Nostalgia Dining Lounge's Mobsters and Molls themed night was priced at P 1,850 net per person inclusive of a sumptuous four course dinner and welcome cocktail. That evening, our welcome cocktail was the refreshing Red Moll, a sparkling blend of gin, vodka, cranberry and clear soda. Smooth and crisp with a bubbly effervescence, the Red Moll opens up your palate for the four-course dinner.


The evening's first course was then served, Ma Baker's Prosciutto Di Parma, with sweet melon wrapped in parma ham served with crusty bread and garden-fresh greens with balsamic truffle reduction. Melon and parma. Like a boss. A mob boss. 

For the second course, a hearty Mobsters Sausage and Beans Soup (L) was served, topped with fresh alfalfa sprouts. For the main course, diners can choose from three choices, including the King Prawns and Scallop in Arrabiata Sauce with grilled king prawns, squid, and pan-fried scallop in a spicy tomato sauce...


...and the Steak Pizzaiola Ala Capone, a tender beef fillet mignon with sweet and smoky bell peppers, tomato concasse, and focaccia bread. The savory richness of the beef is perfectly tempered by the mildly sweet and tart notes of the bell peppers and tomato concasse. Savory and satisfying, this dish packs some serious flavors in true Mobsters and Molls style.


The creamy pesto and fresh alfalfa complete the dish with its fresh and nutty notes. Diners can also opt for a vegetarian main course, with the Melanzane Alla Parmigiana, a savory dish with layers of slow-cooked tomato and aubergine.

After a sumptuous meal, it was time for a shot of whiskey. And no, not just any whisky. What better way to celebrate the roaring twenties than with the bottled spirit of the legendary Irish band with The Pogues, the official Irish whiskey of the band. The bold and intense notes reflect the same intensity as the band.


Cap your feast at Nostalgia Dining Lounge's Mobsters and Molls themed dinner with the indulgent Strawberry Panna Cotta, with a slice of fresh strawberry over creamy buttermilk panna cotta. Diners can also opt for seasonal fresh fruits.


And with a cool speakeasy vibe, I got to sample the classic G & T blended with the Whitney Neil Gin from South Africa. Very cool. And I can't wait for the next themed night at Nostalgia Dining Lounge...

And the new Kinder Menu seems to be a hit with the kids, some of the toughest food critics and pickiest eaters. For them, it's really simple. If they go for a second and a third bite, then that says a lot. Just ask my buddy Tiago...

As the kids enjoy their meal, have a refreshing Original Munchner Lager (Before 6pm: P 165-0.3 Liter/P 250-0.5 Liter/P 445-1 Liter/After 6pm: P 200-0.3 Liter/P 300-0.5 Liter/P 540-1 Liter), the world's best-selling Munich Lager with its clean, clear, refreshing and crisp notes. 


And here's what's in store for the kids at Brotzeit. The Kinder Fladen (P 350), a crisp flatbread topped with cheese and smoked ham, with the creamy notes of cheese layered with the distinct smoky notes of the ham on a rustic crust. Perfect for the kids.


The Corn Dog (P 350), a real childhood classic and favorite, with your favorite hotdog coated in old-fashioned cornmeal batter and deep-fried to a perfect crispness served with pommes and ketchup. And who doesn't love a corn dog? After a second round of Original Munchner Lager, I decided to get my own Corn Dog with a generous dab of mustard since the kids won't share. And I don't blame them. One bite, followed by a sip of Original Munchner Lager, and you've got good vibes all around, as you fondly recall your first Corn Dog (or "hotdog-on-a-stick") so many childhood summers past.  

The kids can also opt for Brotzeit's Pancakes (P 350), soft and fluffy pancakes draped with cream cheese glaze and topped with sprinkles or the comfortingly familiar Chicken Nuggets (P 350), with crispy fried chicken fillet served with crispy pommes and ketchup. Brotzeit also offers a Kinder Spatzle with cheese and bacon.


Time for a third round of Original Munchner Lager, and it's your turn to enjoy Brotzeit's New Lunch Menu.


The Pork Belly Sandwich (P 265), pork love on sourdough bread with crispy pork belly topped with green apple salad is the perfect light yet satisfying dish for that quick lunch. The richness of the pork belly is tempered by the mildly sweet and tart green apple salad for balanced flavors with every bite. Pairs well with a cold Paulaner too.


The hearty Baked Spatzle (P 350), a rustic cheese spatzle with spinach and feta cheese, is another tasty option for lunch. The layers of cheese and the soft spatzle combine for comforting flavors, perfect when paired with a refreshing Original Munchner Lager.


Brotzeit's All-Day Breakfast (P 320) is one dish you can enjoy any time of the day, with garlic sausage, egg, bacon, roasted potatoes, and Bavarian beans. The classic sausage and potatoes combo is given an extra punch with the bacon and egg for a classic breakfast that's great for lunch and dinner too and anything in between with a cold beer. The soothing heat from the Bavarian beans rounds out the dish.


The Brathandl (P 265), a tender roast chicken quarter with reis pilav and green peas or pommes is your classic chicken meal with that Brotzeit spin. The tender and juicy chicken, with its crisp roasted outer layer adds textural contrasts followed by burst of intense and richly seasoned flavors.


The Brotzeit Burger (P 265), with a savory meat patty topped with bacon and caramelized onions on a brezn bun should satisfy any serious burger craving. The mildly sweet and smoky notes of the caramelized onions contrasts with the savory richness of the patty, capped by the sharp hints of the bacon. And that dark brezn bun completes the dish.


The hearty Reisfleisch (P 295), stewed pork tenderloin with roasted vegetables and rice is a meal in itself, generously loaded on a skillet. The tender pork, roasted vegetables and rice combine for a satisfying dish, and all you need is a cold Paulaner.

Pair your meal with Brotzeit's traditional Onion Rings or a refreshing Side Salad (P 80) to complete your lunch at Brotzeit. Other tasty sides include the Pommes Side (P 80), crisp French fries that go well with any of the New Lunch Menu, and the Chef's Dessert (P 190) to cap your meal on a sweet and indulgent note. 


Nothing like noodles for a comforting lunch, and Brotzeit's Pan-Seared Chicken Breast (P 350) hits the spot with a tender and delicately seasoned chicken breast stuffed with bacon and onions and laid on German flat noodles draped with mushroom sauce. The chewy noodles coated with rich mushroom sauce adds layers of flavor to the delicate notes of the chicken, punctuated by the distinct flavors of the bacon and onion stuffing. 


Jaeger Schnitzel (P 350), deep-fried breaded pork cutlet with mushroom sauce and pommes, is a personal favorite. Perfectly crisp on the outside, and juicy inside, the flavors are fresh and clean, with the rich mushroom gravy and lemon adding even more flavors. A typical pork and potatoes Bavarian-style lunch with a cold brew, just can't get better than that.


And if you're still hungry, there's always Brotzeit's signature dishes. Make it a real Bavarian style feast with the Brotzeitplatte (P 2,500 good for 4-5 hungry persons), the popular Brotzeit Platter with crispy oven-roasted Schweinshaxn or Pork Knuckles, a selection of Brotzeit's signature Sausages, Pork or Chicken Schnitzel and two side dishes of your choice. This platter calls for another round of Original Munchner Lager.


Looking for sausages with a spicy twist? Brotzeit's Huhnerwurst (P 460), spicy chicken sausages with potato salad and sauerkraut, should do the trick. Another ice-cold Paulaner? Yes, please.


Cap your Bavarian feast with Brotzeit's indulgent Eiskaffe (P 180), a Bavarian-style iced coffee with a shot of espresso topped with a scoop of velvety smooth vanilla ice cream, whipped cream and almonds...


...or the equally decadent Heisse Schokolade, a rich and creamy hot chocolate made from premium bittersweet chocolate topped with whipped cream.


Or go for a liter of the Original Munchner Lager for the road. New Lunch Menu, the Kinder Menu, and the old favorites, Brotzeit is still looking good after four years, and that deserves another toast. Prost!

The fresh Vegetable Platter is then served, with crisp garden-fresh greens and vegetables, assorted balls, and two kinds of tofu.


And here's the beef. Thinly sliced US Angus Chuck Eye Roll, US Beef Short Plate, and Boston Butt pork shoulder, neatly stacked and arranged on ice for the hot pot.


A serving of Chicken and Pork Dumplings, along with slices of Chicken Leg Quarter round out the ingredients for the hot pot.

A bowl of soft and chewy Udon noodles and raw eggs were also served for the hot pot. The variety of fresh and premium ingredients make this one of the better deals in the metro, and watching the hot pot simmer with the different ingredients right on your table just adds to the experience at Shabu-Shabu Ichiban.

Part of the fun of the hot pot dining experience is cooking your own meal right on your table. But just in case you need help, the staff at Shabu-Shabu Ichiban are more than happy to assist in preparing your very own hot pot. Top your steaming hot pot with raw egg and after just a few minutes, your hot pot is ready...


The flavors are rich, clean and fresh, with the broth infused with the different flavors of the various ingredients. Two dipping sauces are served with your hot pot, a soy based sauce and a ponzu sauce which brings out the flavors of the different ingredients of the hot pot. The blend of beef, chicken, pork, vegetables, dumplings and assorted balls combine for a comforting hot pot feast.

Every year, I always look forward to another memorable staycation at my second home...

At F All-Day Dining, guests were served a light Lenten Lunch buffet with a choice of one of three main courses a la carte style during the Easter weekend. Each dish is prepared ala minute, and served fresh from F All-Day Dining's open kitchen.


The main dishes included the light yet flavorful Burnt Coconut Mahi-Mahi, Kewpie and Garlic Chili served with Winged Beans and Steamed Rice, combining the fresh flavors of the mahi-mahi with the distinct notes of burnt coconut and garlic chili without overpowering the fish. It's the delicate balance of flavors that make this dish special.


The crisp and tender Chicken Kushikatsu with sweet Mango Sauce is another tasty option, with skewered chicken deep-fried to crunchy perfection. The juicy chicken and the crisp outer layer provide textural contrasts, with the subtle notes of the chicken kicked up by the tart and refreshing mango sauce to complete the flavors. You'll want some extra rice with this dish.


Or go with the Tiger Prawns with Panko Sesame Crust, keeping with the seafood theme of Lent. The fresh and plump prawns deliver a tasty snap with each bite, followed by a briny sweetness and crunch from the panko crust. Fresh and clean, uncomplicated flavors, just what you need for Lent. 


After the main dishes, cap your Lenten feast with F All-Day Dining's decadent desserts, like the Mocha Cake...

...the nutty Brownie Brittle (L), or the  Green Tea Cake (R), great with a cup of freshly brewed coffee. Think of it as a well-deserved reward after a long and busy week, an indulgence you owe to yourself. So just go with the flow and enjoy sweet little bites for a sweet note to your Easter weekend staycation.


Not to be missed is the Halo-Halo Station, stocked with everything you need to make the perfect Halo-Halo. The Lenten Menu and buffet was available from April 13 to 15, 2017.

The staff at F All-Day Dining made sure we enjoyed another leisurely lunch, while the station chefs prepared plate after plate of savory dishes. F1 Hotel Manila is after all, BGC's Home of Happy Experiences, and the staff makes sure they live up to the monicker with a smile. It really feels like home...at F1 Hotel Manila.


Later that evening, Executive Chef Decker Gokioco and his team whipped up another savory seafood feast for a Lenten dinner at the hotel's elegant function room, with Marinated Crab Meat Salad with Nachos...

...light and tasty starters paired with a comforting bowl of Prawn Bisque (L), a rich and hearty soup bursting with bold flavors followed by a whisper of soothing heat. Fresh Haricot Verts with Lemon Zest (R) was also served along with the main dishes for the evening's buffet dinner...


...like the inventive Fish and Squid Churros with Tartare Sauce, crisp sticks with delicate flavors of seafood capped by the creamy tartare sauce. The lightly crisp outer layer contrasts with the soft fish and squid, releasing a bold and briny sweetness with every bite.


Black Pepper Crabs topped with scallions, chili, and garlic add to the festive mood of the evening. Go ahead and use your hands...


But Executive Chef had another must-try dish that evening, the Phyllo-Crusted Salmon with Okra Frites, Soy and Sesame Sauce and Garlic, with tender slab of premium salmon wrapped in a paper-thin sheet of unleavened dough. Topped with crisp salmon crackling and crunchy okra, it's another well-executed dish with a rich play on textures and balanced notes. The creamy salmon, with its buttery texture, is complemented by the soy and sesame sauce. Seconds? Absolutely.


For dessert, Poached Pears, Citrus Jelly, Mango Mousse served in shot glasses...


...and Orange and Cashew Nuts Sans Rival Bites cap yet another memorable staycation at F1 Hotel Manila.

A cool cocktail by the bar facing the beach, it's one of those mandatory activities on a getaway to the legendary coast of El Nido. And there's one spot that's perfectly set-up for that scenario...


Manille Beach Bar is another establishment within the expansive Lio Tourism Estate in El Nido by Ayala Land, and if you're after some cool good vibes, this is it. Inventive, handcrafted cocktails prepared by master mixologists using the very best selection from the country's oldest distillery, it's another must-try bar at Lio Tourism Estate. Named after Destileria Limtuaco & Co.'s flagship Philippine craft spirit brand, Manille Liqueur de Calamansi and Dalandan, you can expect new and exciting cocktails right here at Manille Beach Bar. Read on and take a virtual round of cocktails and tasty bites...


Located right on the beach, Manille Beach Bar gives you a front row seat to the sunset. The open design gives it a casual vibe, accentuated by aged wooden barrels to complete the look. The circular bar, with its native thatched roof, adds to the tropical beach feel, and you just know you'll stay for more than just a couple of cocktails.


The new Lio Tourism Estate is a massive development with over 325 hectares, with over half retained as non-developable nature reserve sites and open spaces, consistent with the guiding philosophy of sustainability and inclusive growth ensuring the least impact to the environment while benefiting the local community. Within the estate are resorts, hotels, retail and food establishments and residential areas for a totally integrated resort community (for more on Lio Tourism Estate, see my post on my other travel blog, Discover Lio El Nido...). By sunset, a sudden craving for cocktails is almost automatic. Sunsets are a visual cue, it's not only magic hour, it's happy hour.

And it was great to see old friends again, Larry Guevarra and Sharleen Antonio (R), award-winning master mixologists at the helm of Manille Beach Bar. Be prepared for an awesome show by Larry and Sharleen when they prepare their signature cocktails. And be prepared for some good vibes all the way...

Manille Beach Bar is Destileria Limtuaco's first stand-alone bar concept showcasing their range of products (for more on Destileria Limtuaco, see my earlier posts, Philippine Craft Spirits: The Best of the Philippines in a Bottle and Local Flavors in a Bottle: At the Manille Liqueur de Dalandan Launch...), and El Nido is the perfect spot.


Larry and his team immediately get to work inside the circular bar, preparing the welcome cocktail for the evening...


The Manille Basil Smash, a refreshing concoction made with Empire London Dry Gin, Manille Liqueur de Calamansi, lemon juice, fresh basil leaves, simple syrup and served on the rocks, it's the perfect cocktail to get you started at Manille Beach Bar.


Pair your cocktail with Manille Beach Bar's Manille Longanisa Nachos, crunchy corn chips smothered with fresh salsa, cheese sauce, and local pork sausage meat cooked with Imeldifique Cooking Wine, another fine product from Destileria Limtuaco.

The Paradise Salad (L) is another tempting starter with fresh Romaine lettuce, cucumbers, and diced mangoes drizzled with Destileria Limtuaco's Paradise Mango Rum Liqueur. Destileria Limtuaco's Imeldific Cooking Wine is also used for the Spicy Chicken Wings (R), with its sweet and spicy glaze.


Or go for Maille Beach Bar's Signature Cheeseburger with 100% all-beef patty topped with cheese, lettuce and onion and served with side of fries.

Outside Manille Beach Bar, a grill made from an aged wooden barrel is fired up for the main courses, featuring a selection of grilled pork and chicken. A good bar has to be complemented with equally good food, and Manille Beach Bar gets a check mark on both counts.


The Grilled Meat Platter features Skewered Pork BBQ, Paradise Mango Grilled Chicken, and Grilled Pork Liempo in one plate for the seriously hungry, and this is what you need after one too many cocktails...


...but it's the Amadeo Coffee Beef Ribs that had me with the first bite. Tender and juicy choice cut beef rib slowly stewed and simmered with Destileria Limtuaco's Amadeo Coffee Liqueur, served with garlic rice and vegetables, it just can't get better than that. The nutty notes of the Amadeo Coffee Liqueur adds depth to the dish, complementing the savory richness of the fork-tender beef. You'll probably want some extra rice with this one...


In between bites, Larry and his team prepared even more cocktails, including the El Nido Gold, made with Destileria Limtuaco's El Hombre Gold, Manille Liqueur de Dalandan, elderflower syrup, guava juice, and lemon juice. Good vibes...


And there's more. The Calauit Park Swizzle, a soothing blend with Old Captain 5 Year Old Rum, orgeat syrup, guava juice, and Angostura bitters, is sweet and easy, and be prepared for a light buzz. You're on vacation, so have another round...

Larry and Sharleen capped the evening with their signature Flight to Lio, a sampler of their cocktails executed in Larry and Sharleen's unique style and flair. All four cocktails were served at the same time, now how cool is that? Just leave it to Larry, Sharleen and everyone at Manille Beach Bar for some good vibes at Lio El Nido.


Aloe-Haaa!, Yuzu Good To Me, Lio Sunset, and Old is Gold, pick one more cocktail for the road...


After a few more rounds of cocktails, guests were then given sampler miniature bottles of Destileria Limtuaco's craft spirits. Good vibes all around. It's great to see old friends again, at the new Lio Tourism Estate, El Nido's hottest new travel destination...

Our second day at Lio El Nido began with a tour of Lio Tourism Estate's very own farms, where garden fresh greens and pork are raised organically adhering to the environmental advocacy set by Ayala Land. It's this delicate balance of nature and development that sets Lio Tourism Estate apart from the usual resort communities.


A few minutes drive from the farm is Lio Tourism Estate's other secret, their very own lagoon surrounded by lush mangroves. Kayaks and bamboo rafts are available for rent for a tranquil cruise around the protected lagoon. Keep an eye out for native ducks, a sure sign of the lagoon's ecological health.


A farm tour and kayaking in Lio Tourism Estate's private lagoon in the morning, and you're just about ready for lunch with this breathtaking view right across Globy Travelling Chef's al fresco dining area.


A fresh Banana Shake starts off your international dining experience at Globy Travelling Chef. Globy Travelling Chef offers a variety of fresh juices and shakes, just ask the staff what's available that day.


American, English, Continental or Filipino Breakfast? Or why not a Kenyan "Uji" Breakfast with oats cooked in coconut milk? Or go for an original from Globy Travelling Chef with the Globy's Breakfast (P 350), with golden-fried potato pancake topped with smoked salmon and poached egg draped in a creamy cheese sauce to start the day right.

A cold beer and a good steak, always a good idea. A cold beer and a good steak by the beach? Even better...


Pukka Bar is another dining establishment inside the impressive Lio Tourism Estate in El Nido, offering great food, cocktails and ice cold beers with a beachfront view. An expansive 325 hectare development, Lio Tourism Estate by Ayala Land is the hottest new travel destination in El Nido (for more on Lio Tourism Estate by Ayala Land, see my post on my other travel blog, Discover Lio El Nido...). After a half day of island hopping, a good steak and a cold beer seems just about right to end the day.

Located at the beach, Pukka Bar is ideally situated at the center of the action, with a panoramic view of the beach. Enjoy your ice-cold beer with some live music, and you're in the island groove in no time. After a few rounds of beer, it's time to settle down with some good eats...


Start with Pukka Bar's Nachos Bowl Supreme (P 180), crisp nachos served with a mildly spicy and cheese bean dip...


...followed by crispy deep-fried and battered Calamares (P 200) with a sweet and sour chili dip. After quick work on the nachos and calamares, have another round of beer and pair it with something fresh, with clean and briny notes.

The Grilled Lapu-Lapu (P 480/P 520) is another must-try dish at El Nido Grill, with its delicate white meat delivering a subtle sweetness with each bite. Uncomplicated, just pure, real, honest, and clean flavors, nothing beats that.

There's no better way to appreciate the richness of Philippine regional cuisine than to head out to the source and immerse yourself in the local culture and experience it first-hand. With over 7,107 islands, our culinary heritage is as diverse as the vastness of the archipelago, infused by the distinct local cultures of each region, and spiced up by historical influences. It's this unique diversity that makes Philippine cuisine so rich, shaped by the unique geographical features and resources of each region, and lovingly preserved by tradition and a deep sense of local pride.  


The Department of Tourism's Secret Kitchens of Samar Kulinarya Tour is an offshoot of the recent Madrid Fusion, an annual culinary event celebrating the shared history and culinary heritage of Spain and the Philippines (for more on Madrid Fusion, see my previous posts, Sights and Flavors at Madrid Fusion Manila 2016 and Made in Spain: Pork Love at Madrid Fusion Manila 2016). The renewed interest in traditional gastronomy, specifically regional cuisine, presents unique opportunities to rediscover comforting flavors and reconnect with our roots. And there's nothing like experiencing local cuisine, providing insights in the region's culture and history. Like they say, know what the locals eat, and you'll gain a better perspective on the local vibe. Read on and rediscover the flavors of Eastern Visayas on a virtual tour of the twin cities of Calbayog and Catbalogan with a final stop at Tacloban on my Secret Kitchens of Samar Kulinarya Tour...

A red eye flight to Calbayog kicks off my culinary adventures to Eastern Samar, and catching the sunrise high above the clouds appeared as a good sign of even more good things to come. A bit past 6am, touchdown. And my Secret Kitchens of Samar Kulinarya Tour began at the quaint city of Calbayog...

...just in time for breakfast. Representatives from the Department of Tourism and Local Government greeted my arrival with the traditional warm welcome, and transported me to the Calbayog City Tourism Office at the heart of Calbayog's old Spanish quarter. Inside the historic structure, a breakfast feast was laid out...


For centuries, the rich and fertile lands of Samar has formed the foundation for a stable agrarian economy, and this is evident in the local cuisine reflecting the bountiful harvest of the region. Samar is also surrounded by an abundance of marine resources, with the Philippine Sea to its east and north, the San Bernardino Straight separating it from Southeastern Luzon, the Camotes and Visayas Seas to the west, and the Bohol Sea and Surigao Straight to the south. To this day, Samar remains one of the country's leading fish importing regions. A refreshing bowl of Ginataang Pako at Laing with Tinapa Flakes reflects the bounties of both land and sea, with a hearty salad of local fiddlehead fern draped in creamy coconut milk blended with taro leaves topped with dried smoked fish flakes and onions. The creamy notes of the coconut are complemented by the mildly sweet hints of the fiddlehead fern and taro leaves, capped by the subtle salty and smoky flavors of the fish for complex yet balanced flavors. There is an earthy and rustic simplicity to the dish, yet each bite is followed by a burst of vibrant flavors reflecting the richness of Samar's bountiful land and seas. Pure, clean, and fresh flavors, this is Samar on a plate, lovingly recreated by Mrs. Rosaria Gonzaga, one of Calbayog's noted culinary figures.


A playfully inventive and modern twist comes into play with the Tinapa Dynamite, a fiery local chili stuffed with the local smoked fish and wrapped in a crisp spring roll. The dish may appear modern, but you can trace the origins of the dish from Chinese influences common in the country. It's the melting pot of various cultures that have enriched the local cuisine, becoming their very own over time. The flavors are bold and upfront, the soothing heat of the chili tempered by the dried fish and sweet sour sauce. 


Eastern Visayas creates their own unique spin on the iconic pork sisig of Northern Luzon, replacing pork with fresh fish with the Seafood Sisig. The delicate notes of the fish are punctuated by vibrant local citrus hints and comforting heat from the chili and red onions followed by the creamy flavor of coconut milk. And unlike the original pork sisig, you can enjoy generous servings of Seafood Sisig without the guilt. Seafood has always played a vital role in the history and economy of Samar, and the Secret Kitchens of Samar Kulinarya Tour has revealed even more delectable seafood dishes...


...like the Binukohang Tinapa at Hipon, a fresh medley of shrimps, crabs and dried fish with shredded coconut meat. The briny sweetness of the plump shrimps and succulent crabs pair well with the natural sweetness of the coconut, capped by the distinct salty notes of the dried fish. The coconut is a vital crop in the agrarian economy of Samar, and you'll find coconuts infused in many local dishes. Like any local cuisine, the unique geography and its resources often dictate the evolution of its local dishes. The day's freshest catch on a plate, Samar's seafood is always a must-try when you visit Eastern Visayas. 


Then, there are the staples of Calbayog's seafood heritage like Labtinao, a dried fish delicately marinated in local vinegar and seasoned with spice. Unlike the usual dried fish, Samar's Labtinao is juicy and moist with a light and crisp outer layer, releasing briny flavors. A common breakfast staple, it's been said that each household in Samar takes pride in their own homemade dried fish, and finding the best Labtinao in Samar would be an open-ended discussion among local residents. A local vinegar dip, steamed white rice, and fresh tomatoes, Samar's Labtinao sets you up for a comforting meal for breakfast, any time of day.


The signature Tinapa of Samar, with its vivid golden hues, is another staple that should not be missed. Made from fresh hasa-hasa and alumahan, the local mackerel commonly found in Samar, smoking fish is a centuries-old tradition to preserve the freshness of the seafood. And in Samar, this traditional craft has been elevated into an art form. Samar's tinapa is not overwhelmingly salty, in fact, one can taste a whisper of sweetness best enjoyed with rice, tomatoes, and a vinegar dip. Smoked and dried for hours, the delicate notes of the fish are preserved with a layer of smoky flavors that's hard to resist. So go ahead, go for that extra bowl of rice...


If you're craving for some pork love, Samar's got that covered too. The Pork Humba is traditionally regarded as the Visayan version of Adobo, with tender pork belly simmered with black beans or tausi. The origins of the dish can be traced back to early Chinese influences, specifically the Hong-Ba or braised pork belly dish. The Visayan humba is noticeably sweeter than the usual vinegar and soy-based adobo of the north, slow-cooked until the pork belly just melts in your mouth. The sweetness of the dish is balanced by the salty notes of the black beans for balanced flavors. But unlike the normal pork adobo, you don't just pair this with steamed white rice...  


...you pair it with sticky red rice or Sinakugan poured with hot chocolate. And to my surprise, it does work. The savory richness of the pork humba is perfectly enhanced by the red rice draped in chocolate. The confluence of indigenous cuisine with Spanish influences become immediately evident, defining Samar's unique culinary identity. And this is where the flavors of Samar come through with a consistent distinction. The traditional dishes of Samar combine the sweet with the savory in a comforting combination that's unique to the region. And as I experienced even more local dishes the following day in both Calbayog and Catbalogan, the contrasting flavors of sweetness with savory, sour, salty, and spicy notes remain a recurring theme. The play on contrasting flavors add variety in each and every bite, yet there is a delicate balance for a seamless blend. Maybe this explains the happy disposition of the people of Samar, remaining steadfast and optimistic despite the calamities of recent years. It's true what they say, immersing yourself in local cuisine often reveals insightful perspectives on the region's unique culture.


Samar's local cottage cheese, the Queseo, made with carabao's milk and served with fresh tomatoes and cucumber was also served. The soft and silky texture delivers creamy notes  punctuated by mildly salty and sour hints from the vinegar used in the curing process. Sliced in thin, round shapes, the local kesong puti is great on its own with the tomatoes. A common breakfast staple, Samar's queseo is often paired with local bread and coffee, including their own malunggay bread made with moringa leaves.


Each region in the Philippines has their own noodle dish, the Pancit, and Samar boasts of their Binukohang Pancit with shredded coconut meat and noodles, vegetables, seafood and pork. The blend of noodles and coconut meat is unique, combining both sweet and savory notes in one dish. It's yet another example of Samar's abundant harvests from both the land and sea, and the consistent theme of contrasting flavors.


In between tasty bites, new ways of enjoying tinapa are constantly being created, like Taro Chips with Tinapa Dip. And I'm told more exciting new dishes are being developed by the young talented chefs of Samar. Indeed, these are exciting times...


A full plate followed by another, nothing like a sumptuous breakfast of traditional local dishes to kick off a culinary tour of Eastern Visayas. During the leisurely breakfast, the staff of the Calbayog City Tourism Office shared many of their exciting activities, including their famed zip line at the top of Malajog Ridge Nature Park leading down to a pristine island, their many waterfalls and caves, and hot springs. Calbayog is all geared up for summer, and their local cuisine is part of the experience, another layer to the many surprises of Eastern Visayas.


But save room for dessert. Like many regions in the country, rice is often used as the base in creating sweet delicacies, including the Biko Pandan. The sticky rice dessert has a fragrant aroma from the pandan with an indulgent sweetness, perfect with a cup of local coffee.


The Sinarungsung is another local rice-based delicacy rolled in cone-shaped banana leaf, just one of many in Samar. Cooked in coconut milk, the sinarungsung is soft and sweet, capping a memorable breakfast on my first day at Calbayog.


And Mrs. Rosario Gonzaga has one more tasty surprise, Calbayog's very own Hopia Langka, their own version of the popular Chinese pastry. Instead of the traditional bean filling, the local version features sweet jackfruit for a whole new spin. Samar's culinary scene continues to evolve, and you can find new and innovative dishes showcasing the region's freshest ingredients. But at the core of Samar's heritage is their traditional cuisine preserved by the region's culinary guardians. It's reassuring to find innovation alongside tradition, and Samar allows you to explore and experience the best of both worlds.


By 9am, it was time to explore the picturesque city of Calbayog before the drive to Catbalogan for yet another unique taste of the Secret Kitchens of Samar Kulinarya Tour...

Flavors of Calbayog: Chillin' at Rebelitos Refreshments

Fifty-four years after it served its very first order of Halo-Halo, the local homegrown favorite remains as popular as ever...


Since 1963, generations of local residents from Calbayog knew one place where they could beat the heat with a tasty serving of sweet halo-halo. When in Calbayog, a stop at Rebelito's Refreshments for a refreshing halo-halo is always a good idea not only to cool down but to get a feel of the local vibe...


After a sumptuous early morning breakfast at the Calbayog City Tourism Office (see my earlier post, Secret Kitchens of Samar Kulinarya Tour: Flavors of Calbayog), a tour around the picturesque city seemed like a perfect idea to prepare yourself for the next meal. Within a few steps of the Calbayog City Tourism Office is the iconic Sts. Peter and Paul Cathedral, the central church for the Diocese of Calbayog. It's regarded as the largest church in Samar, and remains the social and religious focal point in the city of Calbayog. Religion plays a unifying thread in the social fabric of Calbayog, a lasting legacy from Spanish colonial times. Built in the early 1800s, the Sts. Peter and Paul Cathedral has been witness to the tumultuous history of the region and the country, with the core of its foundations built from limestone, coral and rock remaining intact through countless generations (more on Calbayog's notable sights on my travel blog soon, at Solo Expeditions).


The revitalized Calbayog River adds to the rustic charm of the city, weaving its way from one end to the other. During my visit, the public parks were in the latter stages of renovation, a sign of the city's optimism and continued growth. Down the old Spanish quarter, ancestral homes maintained by the original families add to the timeless appeal of the city. Later in the morning with the sun nearing its peak, I was told of a long-time popular favorite among locals that got me curious...

And just in time too. The sun and the short walk can build up an appetite. The fifty-four year-old Rebelito's Refreshments is an iconic favorite among locals with their signature halo-halo. The establishment is named after the three children of the owner, with one of the children now managing the restaurant. And it all began with one product...


...the halo-halo. The traditional halo-halo, a dessert with shaved ice and evaporated milk with a variety of preserved fruits and beans has always been a sure-fire way to beat the heat. Today, Rebelito's Refreshments is a full service restaurant offering meals along with their signature halo-halo, including these tasty steamed rice cakes, or Puto. But it's always the halo-halo that local residents come back to again and again for generations.


That indulgent blend of fruit preserves and beans topped with shaved ice and evaporated milk is just what you need after a tour of the city. Rebelito's Refreshments' signature Halo-Halo (P 60) is often paired by locals with the Siopao Asado (P 35), consistent with the recurring sweet and savory theme in Samar's local cuisine. And it's a combination that works for a hearty and satisfying snack. Food trends come and go, and fifty-four years in business says a whole lot about the simple yet indulgent halo-halo.
