Prost! Brotzeit Celebrates First Year Anniversary

And just like that, a year has passed and Brotzeit turns one...


And there's no better way to celebrate a successful first year than in true Brotzeit style, with wheat beer and pork. To celebrate Brotzeit's first year anniversary, start with a tall, cold glass of Paulaner Weissbier and a  Wurstelplatte, or Sausage Platter (P 980), a selection of authentic sausages including Weisswurst, spicy chicken sausages, Nurnberger sausages, pork cheese sausages, and garlic pork sausages with a side of sauerkraut. Brotzeit's homemade sausages always hits the spot, with all-natural sheep casings and a variety of stuffings. A delightful snap comes with every bite, with each sausage offering different flavors. Perfect when paired with any of Brotzeit's Paulaner beers, no meal at Brotzeit is complete without its authentic sausages.


Continue your pork feast at Brotzeit with a hefty Ripperl, or Honey Bavarian Pork Ribs (P 1,050), beer-infused Bavarian pork ribs, served with potato wedges and sauerkraut. Tender, fall-off-the-bone ribs with a sweet honey glaze that pair so well with a tall glass of Paulaner beer.


And finally, sample Brotzeit's newest dish, Schweinbauch (P 550), thick slabs of braised pork belly with roasted potato and red cabbage. The pork belly is tender and juicy, layered with a crisp skin crackling for contrast in textures. The thick slabs are perfectly cooked, and the roasted potatoes and sharply flavored red cabbage complete the dish. Another beer? Absolutely. Beer and pork, nobody does it better than Brotzeit.


End your feast with Nachispeisen Teller, Brotzeit's Dessert Platter (P 650), featuring a sampling of Brotzeit's desserts, including apple strudel, chocolate cake, layered crepes with sweet filling, and homemade ice cream. Just can't get better than that.

Looking Through The Glass Door

 New dishes and more, and things just keep getting better at The Glass Door...


Just a few weeks after the soft opening of The Glass Door, Chef Maj Lazatin is back at the kitchen with a range of new dishes, including her take on classic favorites (check out my previous post on The Glass Door here at http://dude4food.blogspot.com/2014/01/a-peek-at-glass-door.html). Here's a closer look at The Glass Door...


Our sampling of Chef Maj's newest dishes begin with a refreshing Red Sangria (P 300), pure and unadulterated, just the way it should be. Happy hour at The Glass Door is something not to be missed, as Chef Maj offers a full range of potent cocktails to get you in the groove.


After a round of cocktails, The Glass Door's signature starters were served, including Chicken Croquettas (P 220), crisp bite-sized pieces of chicken, carrots, and celery served with a rich and creamy bechamel dip...


...and Salmon Tartare (P 280), a refreshing blend of salmon, lemon, and capers garnished with fresh dill. Rich flavors and contrasting textures make these light dishes a perfect start to any meal at The Glass Door. Both starters pair well with The Glass Door's line of cocktails, and another Red Sangria sounds like a great idea at this point. Or another Old Fashioned, a personal favorite.


Then, Chef Maj serves the first of The Glass Door's new dishes, starting with the Chicharon Bulaklak (P 180), crunchy chicken innards with Chef Maj's special sauce. Perfectly crunchy with a layer of heat, the richness of the crunchy chicharon is tempered by the spicy heat for balance.


Perfect as is, or with a round of cocktails, Chef Maj has another winner in this comforting dish. The spicy heat lingers with every bite, cutting through the richness of each crunchy morsel, and you just can't stop. Seriously good.


The Glass Door's Caesar's Salad (P 240), fresh and crisp romaine lettuce topped with homemade croutons, bacon bits and Chef Maj's special dressing, another classic from Chef Maj.


Then the pasta dishes arrived, starting with The Glass Door's bestseller, Tartufo (P 375), fresh, homemade pasta with wild mushrooms and rich white truffle oil. Each noodle is flavored with the nutty and rich truffle oil for another comforting dish. The Glass Door makes their own pasta fresh daily, and you immediately know this in just one bite, with its firm texture.


Chef Maj then presents her newest pasta creation, Duck Confit Pasta (P 550), with shredded duck sauteed with two kinds of onions and mushrooms topped with homemade marmalade. The rich and buttery flavors from the duck contrasts with the textures of the sharply flavored onions for a unique pasta dish. 


For those who prefer a heftier meal, Chef Maj's new Beef Bourguignon (P 450) should satisfy any appetite. Fork-tender, slow cooked beef served with a side of mashed potatoes. The rich sauce, from the beef's own juices, add a layer of richness to complete the flavors.  


Then, Chef Maj introduces another new dish, Callos (P 450), tender beef with chick peas, slow cooked for hours in olive oil and herbs. Chef Maj returns to her experiences in classic cooking in Europe with this traditional dish. Unlike the more familiar localized version enriched with tomato sauce, Chef Maj's version remains true to the original Spanish dish, with the rich sauce created by hours of cooking. With bread or garlic rice, this one's a real winner. 


Salpicao with Garlic Rice (P 400), tender chunks of beef sauteed in garlic and olive oil and topped with chili for that extra kick. A meal in itself, just the perfect meal for a busy workday. 


And Chef Maj isn't quite done yet. Chicharrones (P 220), crunchy pork belly marinated and double cooked, served with vinegar garlic dip. Deliciously crisp, with each bite bursting with flavor, and another winner in The Glass Door's growing list of favorites.

Exciting new dishes, classic favorites with new twists, and traditional flavors. Plus some great cocktails. And things just keep getting better at The Glass Door...

Asian Flavors at Pink Panda Southeast Asian Diner

Spring rolls, a stir-fry, sate, a few balls and dimsum and then some, followed by a potent Old Stying and a Slanted Sour...  


...just another day at Pink Panda Southeast Asian Diner.

Located at the Ground Floor of Y2 Residence Hotel, Pink Panda Southeast Asian Diner brings the very best Asian street food all in one place. One can peek at the busy kitchen reminiscent of food hawkers preparing a variety of Asian flavors, with its range of Chinese, Malaysian, Singaporean, Vietnamese and Thai dishes.


Pink Panda offers a variety freshly made beverages. Start your meal with a cool and refreshing Pink Panty (P 110), a raspberry flavored iced tea.


A quick glance at Pink Panda's menu can be quite entertaining, with some very amusing names. And one can't help but be amazed with the diverse range of Asian flavors, from dimsum to sate, combining both traditional elements with cool innovative twists in every dish. Pink Panda Southeast Asian Diner brings the flavors of Asian street food inside, with wide and spacious interiors, for one leisurely culinary journey.


The Pink Panda Stir-Fry (P 295), a flavorful vegetable dish with brocolli florettes, Chinese cabbage, carrots, sugar snaps, tofu, and woodear mushrooms. Fresh, crisp vegetables play well with the nutty mushrooms and sesame seeds, while the deep-fried tofu and crunchy wontons add contrasting textures to the dish. Fresh, clean flavors, and a great start.


Dimsum And Then Some (P 325), a bowl of assorted dumplings including Spicy Shrimp Dumplings, Pork Mushroom Shu Mai, Kuchay Shrimp Dumplings, Pumpkin and Shrimp Dumplings, and Shrimp Hakaw drizzled with a rich chili garlic ponzu sauce. All your favorite dumplings in a bowl, in a variety of shapes and colors.


The Pink Panda Rice (P 175), with Chinese sausage, green peas, peppers, fried shallots, and garlic, topped with crispy wontons. The sharp flavors of the Chinese sausage add a flavorful kick, a meal in itself and great as is, or paired with one of Pink Panda's signature mains.


VC Spring Rolls (P 240), a combo of fresh and deep-fried spring rolls stuffed with mushrooms, spiced pork, grilled shrimp and pickled jicama, served with a sate and chili vinegar dip. The deep-fried spring rolls punch through with bold flavors, contrasted with the delicate, clean flavors of the fresh spring roll. This one's a must-try dish at Pink Panda.


Puncak Chicken Sate (P 340), chargrilled chicken skewers topped with roasted peanut sauce, fried shallots, and pickled vegetables, served with a thick sate sauce sprinkled with crushed peanuts. The savory and smoky chicken sate is enriched with the sharpness of the pickled vegetables for balanced flavors, great with a serving of Pink Panda Rice.


For dessert, go for the Panda Balls (P 220/5 pcs), black & white sesame coated buchi filled with black bean, peanut butter and jelly, and dark chocolate. Like a game of chance, the fun part is not knowing the filling until you bite, and if you get the filling you want, then it's a sign of more good things to come. The different fillings are equally good, but the dark chocolate buchi is a personal favorite.


Or the Mix Mix (P 210), Pink Panda's take on the classic Halo-Halo, with pandan and coconut leche flan topped with panutsa sago, nata de coco, red mungo beans and pinipig crisps. A dessert classic reinvented, infused with Southeast Asian flavors for a unique and new dessert. And that's what makes Pink Panda special, with its cool take on traditional flavors.


Coffee? Go for Pink Panda's Kopi Panda (P 110), a refreshing iced coffee blend of espresso, milk and syrup.


And while at Pink Panda, don't forget to enjoy some of their signature craft cocktails, like the classic Old Styling (P 250), with premium whisky, Angostura Bitters, Sweet Vermouth, Cointreau, and agave syrup. A traditional cocktail given a cool twist by Pink Panda, old school was never this cool.


Pink Panda's Slanted Sour (P 250), a refreshing blend of whisky, lemon juice, yuzu, ginger syrup, bitters, egg white, and soda. The distinct sharpness of yuzu, along with ginger and lemon, combine for one refreshing cocktail.


The Pumped Panda (P 250), a wicked concoction with Tequila Blanco, cinnamon syrup, lime juice, vanilla, Mure, and soda, sweet and refreshing, with a potent kick, just enough to get you pumped up for another round.


Fangs & Bangs (P 290), another whimsical cocktail with bourbon, Cointreau, apple tincture, bitters, and yuzu, served in a tea pot. Inspired Japanese Cuisine at Yanagi Japanese Restaurant

Named after a mystical Japanese willow tree, Midas Hotel & Casino's Yanagi Japanese Restaurant casts its spell with its range of authentic Japanese dishes created by Executive Chef Kimito Katagiri. Buffet or a la carte, Yanagi Japanese Restaurant's got something for you.


Kuzu Tataki, a refreshing seafood salad with boiled shrimps, chicken and vegetables covered in a thick and smooth sesame mayonnaise dressing. The delicate, fresh and subtle flavors of the shrimps contrasts with the sweet green bell peppers and perfectly rounded out by the creamy mayo dressing.  Yanagi's Salad Station offers an impressive variety of fresh salad with seafood, including Enoke Wasabi Ae (boiled enoki mushrooms with sliced fishcake), Okura Tofu (steamed egg custard with thinly sliced okra on tofu), Kurage Salad (steamed jellyfish and cucumber salad with sesame dressing), and Wafu Salad (sliced tuna, Japanese Yam and vegetable salad with wasabi goma dressing).


Chef Kimito Katagiri then prepares his signature dishes, including his Aburi Sushi Five Kinds, with hamachi, eel, salmon, tuna, and Lapu-Lapu topped with sliced grapes or strawberries in a creamy sauce. Yanagi offers a wide selection of the freshest sushi and sashimi as well as innovative fusion-inspired creations. And this dish captures Chef Katagiri's creative style, blending layers of different flavors with each sushi.


Aburi Sushi, lightly torched sushi tuna, salmon, eel, hamachi and Lapu-Lapu, topped with fish roe and fruits. Sweet, savory, creamy...different. The subtle flavors of the torched seafood is not overpowered by the other components in a harmonious blend of delicate yet rich flavors.


Tempura Maki, thick and crisp roll with prawn tempura, sliced and topped with fish roe and a creramy sauce, with a side of pickled vegetables. The crispy, deep-fried rolls provide contrasting textures with the creamy sauce and fish roe for another unique blend of flavors.


Kaki Papaya Yaki, grilled Japanese Oysters in papaya served with miso, and yet another of Chef Katagiri's unique dishes. A slice of fresh, sweet papaya is grilled with oysters topped with caramelized Miso mayo sauce, another favorite. Scoop up some sweet papaya with some oysters and the rich and creamy sauce for a distinct blend of flavors. I never imagined papaya and oysters could taste this good. This one's a winner.


Ebi Tempura, deep-fried prawns in light panko breading, a more traditional dish prepared by Chef Katagiri's kitchen. The batter is light and crunchy, not the usual heavy breading, allowing you to taste more of the delicate sweetness and fresh briny prawn and vegetables.


At Yanagi's Sukiyaki Station, each bowl is prepared ala minute, or as you order. And just after a few minutes, your bowl is ready.


Sukiyaki, assorted vegetables and thinly sliced beef cooked in traditional sukiyaki sauce. The flavorful broth  binds the flavors of the rich beef and fresh, crisp vegetables in every spoonful.

At Yanagi's Teppan Station, choose from swordfish, shrimps, squid, or premium tenderloin beef. Or simply go for everything. And the station chef begins to grill your choices in a blur of rapid motions as the aroma lingers. 

My shrimps are prepped with a nob of butter, and the high heat of the grill transforms the shrimps to a bright and vibrant red. For my beef tenderloin, I go for medium rare with a juicy pink center. 


Teppan-Yaki with beef tenderloin, squid and shrimps, served with separate dipping sauces for beef and seafood. The fresh shrimps and quid have that distinct sweetness best enhanced by the soy dipping sauce. The beef tenderloin is great on its own, and the gravy-like dipping sauce balances the bold flavors of the beef. Excellent teppan-yaki, fresh off the grill.

For dessert, Yanagi offers an extensive selection including Coffee Jelly (L) and Zenzai (R), boiled red beans with mochi. other choices include western-style desserts, including indulgent cakes, mousse, fresh fruits and other delectable treats. 


Yanagi's homemade Wasabi Ice Cream, a perfect ending to any meal at Yanagi. Sweet, but with a potent punch from the fresh wasabi for balanced flavors. Rediscovering An Old Favorite At Grillery

There's more to Grillery than their signature grilled items. And seeing an old favorite just made my whole experience at Grillery even better. 


Grab a few beers and discover some of Grillery's signature dishes...


Located inside Greenhills Town Center along Granada Street, Grillery offers a full range of grilled specialties, including pork, chicken and seafood. But there's more to Grillery than their signature grilled items...


Start your meal with something light. Grillery's Balinese Fish (P 200), deep-fried and breaded fish cutlets topped with a Balinese style sate sauce, tomatoes, onions and herbs. The delicate and subtle flavors of the dory are punctuated by the sweet sauce and fresh vegetables for a medley of flavors and textures.


Grillery Liempo (P 285 Sharing/P 190 Solo), one of Grillery's signature grilled items. The thick slabs of grilled pork belly are quite a sight, and you'll be pleasantly surprised with its tender and juicy texture. Evenly cooked, it's not like the usual grilled pork that's often dry and tough, this one is soft and deliciously juicy. Together with a light and crispy outer layer of crackling, each bite is a contrast of textures. The grilled vegetables, with a light and sweet soy glaze, are a perfect side, along with another cold beer. Grillery also offers a variety of platters featuring a combination of their other grilled specialties, great for groups.


It's been a while since I had Chicken ala Kiev, and I remember childhood summers enjoying the versions from Manila Polo Club and Club Filipino. But Grillery does something special to a boneless chicken breast with its own take on a classic. Grillery's Chicken ala Kiev (P 250), tender chicken breast coated in a crisp breading with butter and herbs, served on steamed rice.


The first thing that strikes you is the size of the dish, and it's an impressive sight. Nestled above a cup of rice, the dish is just begging to be sliced, as I grab the knife. And as one slowly slices the dish, the crisp crackling sound of the breading and the buttery aroma fill the air.


And as the rich herbed butter oozes down, you finally give in and go for it. The tender chicken, the crisp outer layer of breading and the rich butter combine for familiar and comforting flavors. And the rice, now flavored with the butter, completes the dish. Seriously good.

Have a few beers, and enjoy some of Grillery's signature grilled items. Or go for a classic like the Chicken ala Kiev. Whatever you choose, you'll end up a winner at Grillery.

Escape to Pico de Loro

Summer's here, time for some sun and sand, time to hit the beach. And just an hour and a half's drive south of the metro, Pico de Loro is quickly emerging as the country's premier sustainable beach resort destination. 


Dubbed as the "Philippine Riviera", Hamilo Coast is located at the southwestern tip of Luzon, roughly a 90 minute drive from the metro via the new CAVITEX Expressway. Within the sprawling seaside sanctuary lies Pico de Loro, the maiden residential community of Hamilo Coast. The massive 5,800 hectare property includes forests, mountains, 13 picturesque coves and 25 kilometers of coastline, just the place for that perfect escape from the city.

The Pico Sands Hotel, my home for the escape to Pico de Loro, is a seven-storey boutique hotel with 154 spacious guest rooms with impressive views of the tranquil lagoon or the scenic mountains. Across the hotel and the lagoon lies one of several exclusive residential properties for members and the sports club.


Inside the Pico Sands Hotel, the wide and spacious lobby immediately welcomes you as you formally begin your escape. The hotel's staff serve refreshing drinks and a cold towel, just what you need after the long drive from the metro.  Inside the hotel, one finds the Pico Restaurant and Bar, a 24-hour restaurant specializing in Mediterranean cuisine. A cool bar, The Pico Bar,  across the restaurant is also open 24 hours, just in case you need a refreshing mojito, or a cold beer. Other recreational facilities include Rain: The Spa at Pico Sands, to pamper guests with traditional and progressive therapeutic treatments, and a gift shop, the Kultura Butil at Pico Sands Hotel, for souvenirs or that extra bottle of suntan lotion.

The typical hotel room is your private sanctuary with everything you need, including wi-fi and a flat screen TV. The average room size is around 37 square meters and room types offered are Standard, Superior, Deluxe, Premier, Corner Deluxe and Penthouse Suites, all with balconies with scenic views. 


Across the hotel, one of several of Pico de Loro's residential buildings can be seen, with each structure with six to seven floors housing an average of 22 units per floor. Typical residential units range from One Bedroom (40-46 sq.m), Two Bedrooms (91-94 sq.m), and 3 Bedroom units (134-143 sq.m), including other options such as corner units, ground floor garden units, lofts/bi-level units, and penthouse units.


An early morning jog or late afternoon walk around the resort community becomes a welcome routine, with walkways and paths lining the complex. The sound of birds and the tranquil lagoon add to your overall experience. In partnership with the WWF, Pico de Loro is actively involved in several environmental programs aimed at preserving the quality of its natural surroundings.


Wooden bridges connect the different structures within the resort community, providing quick and easy access to any of the facilities.

Take long walks, and allow yourself to get lost within the resort community. Its moments like these that really complete your escape, and Pico de Loro makes it all so easy to escape. Leave your earphones in your pockets, and listen to the different birds along the way instead for a cool change. 


The Pico de Loro Country Club offers an impressive list of sports facilities guaranteed to make you burn the calories after indulging in one of the many food outlets of the resort community. The bright, wide and spacious design is also a perfect place to simply hang-out, with even more dining outlets and bars.  

The reception area at the Pico de Loro Sports Club follows the same wide open and spacious lines of the resort, with a friendly staff ready to assist you. 



At the Pico de Loro Country Club's B&B, bowling and billiards are available for use by members and guests. A bar also serves refreshing drinks and cocktails, as well as light meals.

Other facilities inside the Pico de Loro Country Club include badminton courts, squash courts and table tennis, plus covered tennis courts, a video game and karaoke room and a children's playground.

If you need to seriously show your moves, the Pico de Loro Country Club has a regulation sized basketball court and a fully equipped gym as well. Or if you prefer a game of chess, The Pico de Loro Country Club has that covered too, including playing cards, Monopoly, dominoes and mahjong. 


The Pico de Loro Country Club features a multi-level pool, including an infinity pool and a wading pool, just one of the many pools in the resort community. Other activities that can be arranged by the Pico de Loro Country Club include pony rides. row boats, park bikes, bird watching and hiking through one of several mountain trails.



For your convenience, Pico de Loro offers regular shuttle services within the property. Several open-air multi-seat shuttles operate throughout the complex, transporting guests free of charge to their requested destinations inside the resort community. It's also a cool way to familiarize yourself with the resort's many facilities.  


Perched on a hill, Pico de Loro's modern and impressive St. Therese of the Child Chapel is another must-see, offering a stunning view of the coast. 

The glass-walled and fully air-conditioned structure holds regular mass every Sunday at 11:00am. Chosen for weddings countless times, the wrap-around terrace is also ideal for cocktails and receptions. 

The view from the chapel's balcony provides one the best vantage points in the resort complex, with late afternoons offering a dramatic backdrop.

Any great escape from the metro needs good food. And at Pico de Loro's Pico Restaurant and Bar, you get that and more. 


Located at the lobby level of the Pico Sands Hotel, Pico Restaurant and Bar specializes in Mediterranean cuisine, as well as local Filipino dishes (For more on Pico de Loro, check out my previous post here at http://dude4food.blogspot.com/2014/03/escape-to-pico-de-loro.html). After checking in at the Pico Sands Hotel, it was time to check out Pico Restaurant and Bar...

At Pico Restaurant and Bar, you have the option to dine al fresco, overlooking the tranquil lagoon. Just the perfect spot for a cup of coffee. Or a cold beer. Or one of Pico Restaurant and Bar's many dishes. Here's a sampling of some of Pico Restaurant and Bar's signature dishes...


Start with one of Pico Restaurant & Bar's Power Juices, the Detox (P 170), a refreshing and nutritious blend of apples and carrots. Not too sweet, just right.


Then, the kitchens of Pico Restaurant and Bar goes into high gear, serving an array of dishes from starters to mains, in what seemed like a never ending parade of food. Calamares (P 300), batter coated fried squid served with aioli sauce, deep-fried to crispy perfection. Tender squid in a light crisp batter, squeeze some lemon and you just can't stop after one bite.


Callos (P 400), ox tail and tripe stewed in tomato sauce, with chorizo and garbanzo beans, a real classic. The sauce is rich and thick, and the beef is tender, almost buttery, after hours of slow cooking. Great with some bread or rice, seriously good.


Papa al Pomodoro (P 130), puree of fresh tomatoes, served with garlic bread. The fresh tomatoes gives this soup real flavors. Rich, tart, hearty and comforting, another perfect starter before the mains.


Beef Tenderloin Salpicao (P 675), imported beef tenderloin sauteed in garlic and red wine, served with vegetables. You have the option to have it served spicy, topped with fresh chili for that extra kick.


Grilled Hungarian Sausage (P 300), served with bell peppers and onions in a thick, savory sauce. The sauce has a subtle sweetness that tempers the spices of the sausage for balanced flavors.


Risotto Prawns (P 895), creamy mushroom rice topped with sauteed spinach and grilled prawns. The risotto is perfectly cooked, moist with a rich nutty layer of flavor from the earthy mushrooms that combine well with the plump prawns. A meal in itself, and a must-try at Pico Restaurant and Bar.


Rosemary Chicken (P 545, Half Chicken), roasted chicken served with rosemary garlic gravy and seasonal vegetables. The dish is good for two, or one real hungry dude, with a half chicken roasted with herbs. Tender and flavorful, the rosemary and gravy enhances the delicate flavors of the chicken.


Shrimp Wrapped in Bacon (P 550), served with barbecue sauce. Plump shrimps wrapped in bacon, can't go wrong with that. The sweet, smoky and salty bacon  blends so well with the subtle briny flavor of the shrimps in another winning blend of flavors.


Sinigang na Hipon with green mangoes, with just the right level of tartness. I've never had sinigang with green mangoes, and this was absolutely delicious. The fresh vegetables and the juicy shrimps along with slivers of green mangoes pack so much flavor.


Then, this arrived. Size definitely matters. Bulalosso (P 1,700, serves 4), beef bone marrow cooked osso bucco style, served with rice or pasta. Now this dish can feed a small army, or four really hungry dudes. The sheer size of the dish is the first thing that strikes you, as the dish is served amidst the collective "oooohs" and "aaaahs" of the group.


Slow cooked for hours, the tender beef effortlessly falls off the bone. The sauce is rich with herbs and spices, adding yet another rich layer of flavor. A little bone marrow, a piece of tender beef, and some of that rich sauce...perfect.


Bangus Belly Steak, topped with onions and garlic. Tender milkfish belly with a brown gravy like sauce that simply begs for extra rice on the side...


Pasta with Bagnet, a creative blend of crisp cracklings with pasta in a rich tomato based sauce topped with herbs, another winner.


Milo Dinosaur (P 110), dessert you can drink, a rich and creamy chocolate beverage topped with malted chocolate powder. A sweet ending to an epic feast on the first day of my Pico de Loro experience.

The range and variety of dishes at the Pico Restaurant and Bar is equally as impressive as the facilities and activities at Pico de Loro. And after a very satisfying lunch, it was time to explore Pico de Loro's many sights as my escape begins...

A Cold Beer by the Beach and Dinner at Pico de Loro's Sun Coral Cafe

With the fading afternoon light and the rhythmic sound of the cove's gentle surf, ending your day at the beach is the way to go at Pico de Loro. 


After touring the facilities at Pico de Loro, it was time to sample the local cuisine offered by the resort's Sun Coral Cafe at the Pico de Loro Beach Club.


A cold beer by the beach, a perfect way to end the day at Pico de Loro.  Another round, and it's time for dinner at the Pico de Loro Beach Club (or more on Pico de Loro check out my previous post here at http://dude4food.blogspot.com/2014/03/escape-to-pico-de-loro.html).

The Pico de Loro Beach Club is located by the beach, along the protected cove of Hamilo Coast. This is also your gateway to a variety of aqua sports and activities, including kayaking, jet skiing, snorkeling and soon, scuba diving.
The Pico de Loro Beach Club also features an impressive pool and another dining outlet specializing in Filipino cuisine, the Sun Coral Cafe. With views of the pool and the beach, and the option to dine al fresco, Sun Coral Cafe provides yet another component to complete your Pico de Loro experience.


After an impressive first day lunch at Pico Restaurant and Bar, Chef Jayme continues to impress with a range of local dishes at Sun Coral Cafe. Start your meal with Sun Coral Cafe's Mexican Wings, a light starter, and great with a cold beer.


Then, a shift to local flavors sets the pace, starting with the classic Pansit Hab-Hab (P 295), egg noodles with lechon kawali chunks topped with a sunny side-up. Traditional and comforting flavors with the best produce from the nearby local community. Pico de Loro sources all of its ingredients locally, sustaining the surrounding communities as well as ensuring the freshness and quality of each ingredient.


Sinigang na Liempo (P 350), with tender pork belly and fresh vegetables in a tart tamarind-based soup. The large chunks of pork and fresh vegetables offer a medley of rich flavors. A personal favorite, and you'll definitely go for extra rice.


Tinolang Cavite, chicken with pumpkin and vegetables, a local and regional variation of the popular tinola made richer with pumpkin. The pumpkin added a rich and creamy sweetness, seriously good. The kitchens at Sun Coral Cafe is known for their wide range of local and regional cuisine, making this yet another must-try at Pico de Loro.


Crispy Pork Slab (P 350), lechon kawali topped with atsara and served with lechon sauce. Crispy pork deep-fried to perfection, with a perfectly light and crunchy layer of crackling, another must-try at Sun Coral Cafe, and another personal favorite.


Remember the awesome Bulalosso we had for lunch? Chef Jayme prepared a special fried rice with the remaining Bulalosso (see more on our very first lunch at Pico de Loro with the signature Bulalosso here at http://dude4food.blogspot.com/2014/03/lunch-at-pico-de-loros-pico-restaurant.html), beef, sauce and bone marrow mixed and fried with rice. This, with the Crispy Pork Slab and the spicy vinegar dip...absolutely delicious.


And just in case you need a burger fix, the Sun Coral Cafe has that covered too. The Pico Burger (P 375), with cheese, lettuce, and tomato topped with bacon and served with fries.


And for dessert, Chef Jayne pulls out all the stops with his Pan Choco Gateau (P 320), a sweet and savory chocolate dessert baked on a skillet, with sides of cream, raspberry sauce and vanilla ice cream. Pair this with a cup of local brewed coffee, perfect.


After dinner, we decided to ditch the shuttle and go for a leisurely walk back to Pico Sands Hotel. The tranquil lagoon appears just as impressive at night, reflecting the resort's many lights. Excellent food, long leisurely walks...it's all here at Pico de Loro.

Breakfast at Pico de Loro

There's just something about early mornings, and the sound of birds and the view of a tranquil lagoon just completes the picture. 


Time for breakfast at Pico Restaurant and Bar...


An early morning walk around the tree-lined lagoon starts your day, as the residential structures reflect on the still waters of the lagoon. Then, a lingering aroma catches your attention, as you follow your nose. Open 24 hours, Pico Restaurant and Bar gears up for the early morning breakfast service (for more on Pico de Loro, check out my previous post here at http://dude4food.blogspot.com/2014/03/escape-to-pico-de-loro.html).


The salad station is all set up, with fresh greens and vegetables along with freshly baked bread. Pico Restaurant and Bar's breakfast Buffet offers a wide range of choices, including a pancake and omelet station where your order is prepared ala minute and served hot off the grill.

Other choices include local dishes including beef tapa, pork tocino, bangus belly and sausages. You can also order ala carte, but the choices at the buffet spread is quite impressive, with a variety of cereals, congee and other breakfast staples. 

Fresh fruits and cheeses are also available for a light and healthy breakfast, as well as a range of fresh fruit juices and daily products. All unlimited. Including local brewed coffee.


But for me, breakfast almost always equates with bacon. A lot of bacon. A stack of pancakes and two sunny side ups, and I'm ready for breakfast.

At the pancake station, my stack is prepared way before the morning crowd comes in. You have a variety of toppings as well, including fresh fruits and chocolate chips. Next, my sunny side-ups are served in just minutes.


Choose from strawberry, chocolate, honey and maple syrup for your pancakes...


...and settle down for a leisurely breakfast. Starting the day right is always easy at Pico de Loro...and delicious too.

Exploring Pico de Loro's Coves

When we arrived at Pico de Loro the day before, grey skies and a lingering afternoon drizzle almost placed a scheduled tour of the coastline in jeopardy. But not today. The morning greeted us with a magnificent blue sky, and it was time to explore the private coves along Hamilo Coast. 


A calm breeze and the sun at its peak, it's just another perfect day at Pico de Loro...


The Pico de Loro Beach Club is the jump-off point to the thirteen scenic coves of Hamilo Coast. The property forms part of the famous global Coral Triangle, within the Verde Island Passage. The Coral Triangle encompasses the islands and waters of the Philippines, Indonesia, Malaysia, the Solomon Islands, Papua New Guinea, and Timor-Leste. In the Philippines, the Verde Island Passage is one of the most significant links in the global ecosystem of the the Coral Triangle, a known center for marine biodiversity. And Pico de Loro puts you right in the center of it all (for more on Pico de Loro, check out my previous post here at http://dude4food.blogspot.com/2014/03/escape-to-pico-de-loro.html).


The preserved marine sanctuaries and reef ecosystems provide some of the best snorkeling, and soon, scuba diving, adventures. As Pico de Loro's speedboat takes us through the coastline, one can't help but be amazed at the enormous size of the property.


Along the way, one gets to see some of the coast's unusual natural rock formations, like Elephant Island (see the "trunk" sloping down on the left side?)...


...and Turtle Island, offering some cool snorkeling and dive spots to complete your adventure.


Dramatic cut-throughs formed by years of erosion from wind and surf dot the coastline, and at low tide, and with a little luck, Pico de Loro's speedboat could easily navigate through the natural formations.


On the next bend, we finally arrived at Santelmo Cove, one of the jewels along Hamilo Coast, and one of Pico de Loro's private beaches. Santelmo Cove's white sand is as pure as powder, a perfect sanctuary to complete your escape. Protected by the cove, the waters are calm and the surf gentle, an ideal spot for leisurely swim or a family picnic.


As you walk up the powdery white sands of Santelmo Cove, you will find small circular fences protecting sea turtle nests from natural predators. As part of Pico de Loro's coastal resource management, sea turtles are protected in the sanctuary with an established marine turtle conservation program. Other environmental programs include regular clam seeding, and Hamilo Coast has already seeded more than 175 giant clams at Pico de Loro and Santelmo Cove, all thriving and contributing to the rich ecosystem. Pico de Loro regularly organizes an Annual Coastal Clean-Up involving the community, a yearly mangrove reforestation activity as well as provide support to Bantay Dagat.


Santelmo Cove is the perfect place to get lost and away from it all, and just the place for that cold beer. Seems I'm not the only one enjoying a cold beer at the beach...


Santelmo Cove has tables and cushions to make your stay at the beach comfortable and enjoyable, and Pico de loro can arrange tours via speedboat inclusive of lunch and drinks. With my packed lunch from Pico de Loro, and another cold beer, things just can't get any better than that.


Take a walk along the beach, and for a day, the beach is all yours. All yours.


Heading back, one can see the twin peaks of Mt. Pico on the top left, resembling a parrot's open beak pointing upward, inspiring the name Pico de Loro. And as we returned to Pico de Loro Beach Club, plans of a second visit to Santelmo Cove loomed in my head. Soon...

Leaving Pico de Loro

All too soon, my escape to Pico de Loro comes to an end. But not before another comforting lunch by Chef Jayme at Pico Restaurant and Bar...


One last time to savor the ocean breeze and the wide range of comforting flavors at Pico de Loro before the drive home.


After a tour of Pico de Loro's private and secluded coves, we had a late lunch at Pico Restaurant and Bar. A pair of Pico Restaurant & Bar's Power Juices (P 170) were served, the Relax, a refreshing blend of apples, cucumber and mint; and the Purifier, a cool mix of cucumber, carrots, beets and greens. Healthy and refreshing, exactly what you need after an exciting tour around the coves of Hamilo Coast.


For starters, we go for the Gambas al Ajillo (P 550), sauteed shrimps with roasted garlic, paprika and fresh chili. Rich and garlicky, with just the right level of heat.


Then, the mains were served. Lengua con Setas (P 400), tender ox-tongue with mushroom gravy served with vegetables...


...and Mediterranean Chicken (P 545, half chicken), breaded with herbs and fried, served with rice and seasonal vegetables. Hearty and comforting, nothing like a satisfying lunch to cap a perfect escape at Pico de Loro.


Chef Jayme then rolls out some some of his desserts, including this sinfully indulgent Turtle Pie with ice cream  on a cookie crust drizzled with chocolate syrup.


And the perfect escape is complete. Pico de Loro offers the complete package, with all the modern amenities and comforts while remaining in sync with nature, as well as great food. Just can't get any better than that.


One last look at the tranquil lagoon, and it was time for the drive home. Leaving Pico de Loro is never easy, and all too soon, the familiar traffic of the metro jolts us back to reality.

Vikings Luxury Buffet Restaurant opens its fifth and newest branch at SM Megamall, adding to its growing network of branches (other branches are located at SM MOA, SM Marikina, SM North Edsa, SM Lanang Premier).

The wide open and spacious "art museum" inspired theme of the new Vikings SM Megamall branch is designed to capture the idea that each dish created by the army of chefs is a work of art, a "masterpiece" and that diners can freely "paint their palette" with the different "colors" of culinary flavors.


The size of the newest Vikings branch is quite impressive, with a seating capacity for 500+ guests. The open kitchen concept fits perfectly with the wide open space, allowing diners to see the chefs at work at the different stations. A dessert station, as well as beverage station, is situated at the center of the newest branch, while the other stations are located at the sides allowing for ease of movement and access. Even at its peak, navigating your way through the different stations is easy.


Unlike the usual buffet spreads, Vikings offers diners the option to create their very own dishes, with a variety of stations designed to allow guests to customize their culinary creations. Consistent with the aim of allowing diners to "paint their palette," the chef and crew at each station are always ready to assist diners in creating their very own signature dish.

The Pizza and Pasta Station is just one example. And its quite easy to create your very own pasta: Simply select your freshly made pasta, then choose your sauce or topping, and the chef will prepare it ala minute, ready to serve fresh off the pan. Also at the same station, you'll find a variety of pizza fresh from the oven, including the Sicilian Pizza and the intriguing Carbonara Pizza. Or why not make your own? Like the pasta, go ahead and make your very own signature pizza with a variety of toppings to choose from at the station.


At the Asian Station, the chefs fire up up their blazing woks in a flurry of quick and precise movements, as the horde of diners come rushing in. The lunch service is formally opened, and the kitchens at the different stations fire up to greet the incoming army of hungry guests.


At the Grill Station, guests can choose from beef, pork, chicken. squid, crabs, prawns and fish, each grilled to your specification. You can also ask the chef for their recommendation, and the friendly staff is always there to assist.

Vikings continues to push the "create your own dish" concept with its Ramen Station (L) and the Hot Pot Station (R), where you select the ingredients for your very own signature bowl. For dessert, check out the Halo-Halo- Station where you can select the toppings as well.


At the Japanese Station, one can choose from a selection of sushi and sashimi , as well as other Japanese dishes like Tempura and Katsu. As with any buffet, you need a strategy. First, make a quick recon and understand the layout of the different food stations. But like most plans, you'll need an alternative Plan B. A second, and eventually a third plate of sushi was not part of the plan at all, but then again, just go with the flow and enjoy. And at Vikings, they make it real easy for you to just go with the flow.  And no need to rush, each dish is quickly replenished so no need to worry.


The California Temaki Roll is another must-try at the Japanese Station. Fresh vegetables and prawns wrapped in nori drizzled with Japanese mayo. And you can actually see the chefs preparing this delicate sushi rolls as these are quickly snapped up by diners.


And then, there's Vikings' heavy hitters, the all-time favorites at the Carving Station, including Anchovy & Rosemary Baked leg of Lamb...


...Texan Beef Brisket...


...Roast Turkey...


...and Angus Chuck Eye Roll, each one an amazing sight. Simply choose and the chef quickly carves out a portion to your desired thickness. Each savory dish is roasted and seasoned perfectly, with an array of different sauces and grilled vegetables to choose from. This one deserves a second round. And a third. Nothing like a slab of premium roasted meat to bring out the primal carnivore in you.


Then, there's the signature Vikings Boneless Lechon, another must-try. Crisp on the outside, juicy and tender inside.


Don't forget to add some roasted marble potatoes with herbs to your main dish. Other options include grilled corn-on-the-cob with butter and herbs, and roasted carrots and more. You can also start with a fresh salad at the salad station to lessen the guilt. But then again, just go with the flow...

Vikings also has a Spanish Tapas Station, in case you're in the mood to start your meal with small plates, great with mug of Draft beer. Go for the Setas Al Ajillo (L) or the Gambas (R). The range and diversity of dishes is pleasantly overwhelming, from American to European to Asian and everything in between. 


Also not to be missed is the station serving classic Filipino food, like the Crispy Pata in Kare-Kare Sauce...


...or the Lechon Sisig, both refreshing and flavorful twists to all-time favorites. Extra rice? Absolutely.


At the Asian Station, check out the Asian style Roasted Chicken, roasted for hours for a crisp outer layer...


...or the plump and juicy Boiled Shrimps...


...and the whole Steamed Fish topped with herbs and vegetables.


At the Seafood Station, one finds fresh mussels, steamed and then placed on ice, with a variety of sauces.


Or the Oyster Rockfeller, backed oysters with cheese and spinach.

And after an epic feast at Vikings, prepare for another...this time, with an impressive dessert selection from Vikings SM Magemall...


The sheer scale and wide range of dishes at Vikings is impressive (see more on my Vikings experience at SM Megamall here at http://dude4food.blogspot.com/2014/04/prepare-to-feast-at-vikings-megamall.html), and the same is true with dessert.  Consistent with the "luxury buffet" concept of  Vikings, prepare for an awesome dessert feast...


At Vikings, you need to leave room for dessert. Desserts in a variety shapes, sizes and colors...


...each tempting you to go for one more bite...


...as you slowly give in and just go with the flow.


Located front and center at the enormous Vikings SM Megamall, the Dessert Station is easily one of the more popular stations at any Vikings branch. One quick scan, and almost immediately, you know why.


The selection include small, petite desserts...


...to a variety of cakes and pastries featuring different styles and flavors including European, Asian and Filipino desserts.


Fancy some chocolate covered marshmallows? And chocolate or white chocolate? Simplify your decision-making process and just go for both. Go with the flow, right?


How about some freshly made crepes? The chef on station can quickly whip one up for you, with a variety of sweet and savory fillings and toppings.


Yogurt? Pour yourself a heaping bowl with the self-serve yogurt dispenser, and top it with marshmallows and chocolate sprinkles.


Leave room for ice cream too. As I was going for seconds, I see a chubby kid holding a glass for a few more scoops instead of the usual bowl. Intrigued, I follow the kid he as heads to the Milo Shake dispenser and at a touch of button, he has his own version of a Milo Dinosaur. Smart kid, and I quickly ditch the bowl and go for a glass too.


Taking the cue from the chubby kid, here's my own version of a Milo Dinosaur with three scoops of dark chocolate ice cream topped with chocolate sprinkles. Huat Pot Redux: A Few Tips to Enjoy Your Huat Pot Experience

Another round at Huat Pot. And a new strategy.


After an enjoyable and satisfying visit at Huat Pot (see my previous post here at http://dude4food.blogspot.com/2014/01/hot-pot-make-that-huat-pot.html), I knew I had to come back. The extensive selection at Huat Pot promises infinite combinations and flavors. Armed with a plan, here's a few tips to enjoy your Huat Pot experience...


Load up on fresh vegetables. Leeks, mushrooms and leafy greens add to the overall flavor of your broth, and it's good for you too. The vegetables also balance the richness of the various ingredients and flavors of the broth.  


Add your favorites, but dare to explore new flavors. The variety of fresh and premium ingredients, most imported from Taiwan, adds to the uniqueness of one's experience at Huat Pot. Add a few lobster balls with purple yam to your broth, and some egg dumplings. Each ingredient adds its own unique layer of flavor to your broth, and the flavors continue to build as you prepare for a second round. 


Enjoy the experience. A good hot pot meal shouldn't be rushed. Instead, give it some time to fully boil and savor the lingering aroma. Place the thin strips of beef, pork, and lamb on top since this cooks pretty fast, as the colors change in minutes.  


Get help for the dipping sauce. Ask one of the servers for assistance in creating your dipping sauce. The selection at the condiments station is equally impressive, and if it's your first time at Huat Pot, ask for assistance. With the help of Huat Pot's courteous server, I prepared a sauce that was much better than my first attempt, with strong yet balanced flavors. 


Take it slow, and allow to ingredients to simmer. Once the ingredients are tender or the colors change, it's ready. 


Mix it up. Add some noodles for variation.


And once you find a combination you like, stick to it and go for a second, a third, or a fourth round. Just go with the flow. And don't rush, go on a leisurely pace, any good meal should be enjoyed slowly.


End your meal with fruits. Fresh fruits. It's good for you.


But leave some space for Magnum. You just can't not have a Magnum. Time your visit to Huat Pot on your cheat day. 


After your epic feast, just sit back and relax, and end your experience with a freshly brewed cup of coffee to settle down after another epic feast at Huat Pot. Southern Comfort at Racks

Can there be anything more comforting than fried chicken? Call it comfort food, call it soul food, sometimes all you need is some good old fried chicken. 


And Racks clearly has another winner here with their Southern Fried Chicken.

Start your meal with one of Racks' signature soups, the Clam Chowder (P 125, Left), a New England style chowder with Manila clams and bacon or the equally rich and comforting Homestyle Mushroom Soup (P 125, Right), thick and creamy with chunks of mushrooms, not just small bits. 


Classic Caesar Salad (P 190/Solo), fresh and crisp Romaine lettuce with bacon and croutons in a rich Caesar dressing for a balanced meal. The sharpness of the crunchy bacon and parmesan blends well with the rich dressing, always a great starter before the mains. 


And you just got to have some ribs. Racks Premium Boneless Pork Ribs (P 360/ Quarter), with a side of coleslaw and potato salad. Tender pork without the bone, with the signature dry rub of Racks. I really prefer ribs with a Texan style dry rub more than the usual wet glaze. The flavors of the meat really come through, just add some of Racks' Extra Hot Barbecue Sauce for a little kick.  


Southern Fried Chicken (P 640/Whole Chicken), deliciously crisp chicken while still tender and juicy inside, served with buttermilk biscuits and honey, comfort food at its best. This is one Racks' best kept secrets, the kind of dish that's well worth the drive to Racks. A side of country gravy completes the dish. The gravy isn't too salty, just right with a thick and rich texture that complements the crispy chicken. 


The whole chicken order has eight pieces, but you can go for a half chicken order too. Half or whole, you just can't go wrong with Racks' Southern Fried Chicken. And ditch the knife and fork, just go for it. Perfectly seasoned with Racks' very own secret herbs and spices, the contrasting textures of the crisp outer layer and the tender, juicy chicken makes this one a real winner. Drizzle a little honey on the crisp skin for a deliciously sweet and salty blend that works. Seriously good.  


And those buttermilk biscuits...simply pour some honey and enjoy. Honey drizzled buttermilk biscuits with some crispy Southern Fried Chicken...perfect.

Southern style comfort food, soul food, call it what you want, and there's really nothing more comforting than fried chicken. And Racks has one of the best in the metro.
