With the fading afternoon light and the rhythmic sound of the cove's gentle surf, ending your day at the beach is the way to go at Pico de Loro.
After touring the facilities at Pico de Loro, it was time to sample the local cuisine offered by the resort's Sun Coral Cafe at the Pico de Loro Beach Club.
A cold beer by the beach, a perfect way to end the day at Pico de Loro. Another round, and it's time for dinner at the Pico de Loro Beach Club (or more on Pico de Loro check out my previous post here at http://dude4food.blogspot.com/2014/03/escape-to-pico-de-loro.html).
The Pico de Loro Beach Club is located by the beach, along the protected cove of Hamilo Coast. This is also your gateway to a variety of aqua sports and activities, including kayaking, jet skiing, snorkeling and soon, scuba diving.
The Pico de Loro Beach Club also features an impressive pool and another dining outlet specializing in Filipino cuisine, the Sun Coral Cafe. With views of the pool and the beach, and the option to dine al fresco, Sun Coral Cafe provides yet another component to complete your Pico de Loro experience.
After an impressive first day lunch at Pico Restaurant and Bar, Chef Jayme continues to impress with a range of local dishes at Sun Coral Cafe. Start your meal with Sun Coral Cafe's Mexican Wings, a light starter, and great with a cold beer.
Then, a shift to local flavors sets the pace, starting with the classic Pansit Hab-Hab (P 295), egg noodles with lechon kawali chunks topped with a sunny side-up. Traditional and comforting flavors with the best produce from the nearby local community. Pico de Loro sources all of its ingredients locally, sustaining the surrounding communities as well as ensuring the freshness and quality of each ingredient.
Sinigang na Liempo (P 350), with tender pork belly and fresh vegetables in a tart tamarind-based soup. The large chunks of pork and fresh vegetables offer a medley of rich flavors. A personal favorite, and you'll definitely go for extra rice.
Tinolang Cavite, chicken with pumpkin and vegetables, a local and regional variation of the popular tinola made richer with pumpkin. The pumpkin added a rich and creamy sweetness, seriously good. The kitchens at Sun Coral Cafe is known for their wide range of local and regional cuisine, making this yet another must-try at Pico de Loro.
Crispy Pork Slab (P 350), lechon kawali topped with atsara and served with lechon sauce. Crispy pork deep-fried to perfection, with a perfectly light and crunchy layer of crackling, another must-try at Sun Coral Cafe, and another personal favorite.
Remember the awesome Bulalosso we had for lunch? Chef Jayme prepared a special fried rice with the remaining Bulalosso (see more on our very first lunch at Pico de Loro with the signature Bulalosso here at http://dude4food.blogspot.com/2014/03/lunch-at-pico-de-loros-pico-restaurant.html), beef, sauce and bone marrow mixed and fried with rice. This, with the Crispy Pork Slab and the spicy vinegar dip...absolutely delicious.
And just in case you need a burger fix, the Sun Coral Cafe has that covered too. The Pico Burger (P 375), with cheese, lettuce, and tomato topped with bacon and served with fries.
And for dessert, Chef Jayne pulls out all the stops with his Pan Choco Gateau (P 320), a sweet and savory chocolate dessert baked on a skillet, with sides of cream, raspberry sauce and vanilla ice cream. Pair this with a cup of local brewed coffee, perfect.
After dinner, we decided to ditch the shuttle and go for a leisurely walk back to Pico Sands Hotel. The tranquil lagoon appears just as impressive at night, reflecting the resort's many lights. Excellent food, long leisurely walks...it's all here at Pico de Loro.
