...with an even more elaborate and comprehensive display on the right side. The concept is pure genius, reflecting how one can creatively adapt to the challenges of the new normal.

As dining at home, the rise of the food delivery culture and increased online usage emerge as the new consumer habits defining the quarantine experience, businesses need to evolve with the times to remain relevant. As the food service sector struggles to survive and inconsistent liquor bans hinder volumes, Don Revy needed to go outside of the proverbial box for an innovative way to inject life back to a struggling sector. And this is where The Wine Pantry comes in, a simple yet elegant solution to a long and lingering reality of the times.

"A meal without wine is like a day without sunshine."

Our wine experience with The Wine Pantry begins with the refreshingly crisp Pebble Lane Sauvignon Blanc from New Zealand, perfectly chilled for pronounced notes. From the plains and dry river beds draped in a cool maritime climate comes grapes with delicately sharp yet balanced flavors with hints of sweet passionfruit and berries.

Light and easy on the palate with a silky smooth finish, the Pebble Lane Sauvignon Blanc is the perfect choice to kick-off your wine flight with The Wine Pantry at Dusit Thani Manila. It also pairs well with the tasty starters at The Pantry...

...like the garden-fresh Caesar's Salad topped with cheese, bacon and croutons. The crispness and clean flavors of the greens slathered with the indulgent dressing opens the palate, cleansed with a sip of the Pebble Lane Sauvignon Blanc. I normally don't skip the salad offerings at fine dining establishments simply because you can't recreate this kind freshness and quality at home with the usual supermarket variety produce. And the salad selection at The Pantry does not disappoint. Other options that evening at the Salad Station included the Creole Potato Salad and classic Coleslaw which pairs well with the Baby Back Ribs from the grill.

Switch gears with the bold flavors of the rich Tomato Soup with its light and thin yet flavorful broth. The addition of finely minced fresh vegetables add layers of both texture and flavor for a hearty and comforting starter.

The Seafood Boil is not to be missed at The Pantry. Have a bowl of plump clams and mussels, succulent shrimps, marble potatoes, sweet corn and sausages on a rich broth infused with the distinct flavors of the various ingredients. Enjoy it with slice of crusty sourdough bread to mop up the broth.

Just like Filipinos, Cajuns enjoy their whole roasted pig slow-roasted for 6 to as much as 12 hours. That day at Dusit Thani Manila, The Pantry featured their own lavish whole roasted pig adding a festive vibe to our Geaux Friday experience.

After all, it just isn't a real feast without Lechon, right? The Pantry's Lechon is masterfully executed, from the juicy pork to the crisp layer of crackling.

Each bite of the buttery tender pork drapes the palate with a savory richness capped by the sweet notes of the liver sauce. And to complete the experience, take a bite of the crackling announced by an audible crunch. The Lechon at The Pantry's Geaux Friday is just one of many tasty highlights with so many more...

...like the assorted seafood offerings prepared with the rich Cajun spice blends of Louisiana...

...and the Angus Beef Brisket and Sausages. And just like that, dining at The Pantry's Geaux Friday notches up a gear into overdrive.

The grilled Sausages delivers richly seasoned flavors capped by hints of smoke with that delectable snap in every bite...

...while the fork-tender Angus Beef Brisket with its pink smoke rings and charred crust brings smoky savory notes to the palate. And it's tender, you don't need a knife to enjoy a slice.

The deep notes of Mariano J. Lacort Rioja Reserva adds its own layer of richness to the evening's feast at The Pantry. The wide range of nuanced notes, from hints of vanilla to spiced oak, cherry and chocolate come together seamlessly for a vibrant finish pairing well with the various meats from the grill.

The bold yet soothing character of the Spanish Tempranillo blend comes through with each sip, tempering the rich savory notes of the grilled meats. Another bite of the grilled meats and the flavors become even more intense. Dinner is just a whole lot better with wine. And that's exactly what "a meal without wine is like a day without sunshine" is all about.

The Wine Pantry by Don Revy brings out yet another bottle from their collection...

...the Maxwell Silver Hammer Shiraz from Australia with its lingering depth of flavor. A full-bodied wine with a distinct mouthfeel, each sip brings rich notes of plum and vanilla with an elegantly smooth finish pairing equally well with the savory dishes at The Pantry.

For wine lovers and simply those aching to dine out in a safe environment reconfigured for the new normal, The Wine Pantry by Don Revy at The Pantry of Dusit Thani Manila is an excellent option. ...or cap it with a New Orleans classic, the soft and sweet Beignet. Light and fluffy with a delicately crisp layer covered in powdered sugar, it's the perfect ending with that Southern Louisiana vibe. The lavish cuisine of Louisiana are available every Friday with Geaux Friday at The Pantry from 6pm to 10pm for only P 1,850 net. Parking? No problem.
