Dining in the Next Normal: Move Over Banana Bread and Make Way for Chef Sau del Rosario's Indulgent Vananah Walnut Tsokolateh Vread

At the height of the nationwide lockdown due to the viral pandemic, Chef Sau del Rosario's kitchens at 25 Seeds and Cafe Fleur were busy preparing meals for Pampanga's medical frontliners. But Chef Sau's creativity couldn't be contained by the quarantine, he was also rolling out his own elegant spin with that Capampangan flair on popular bakery favorites with his Vuco Fye, Klassic Heg Fye, Tsokolateh Heg Fye, Henseymadah, Huve Brioche and...the Vananah Walnut Tsokolateh Vread.


One of the country's premier chefs, Sau del Rosario revisits and transforms well-loved and nostalgic classics in his own creative style and elevating these bakery staples to an all new and decadent flavor experience. The banana bread is given a lavish makeover in true Chef Sau fashion with the addition of walnuts and premium local Malagos Chocolate with the Vananah Walnut Tsokolateh Vread from his very own Pan de Sau Bekeri. This and other equally luxurious creations are all available for delivery to Metro Manila with regular runs on Tuesdays, Thursdays and Sundays...


As restaurants closed for the duration of the lockdown due to dine-in restrictions, many kitchens continued to operate for pick-up, take-out and delivery operations. The quarantine experience has shown some successful models in innovative food offerings and food delivery. Chef Sau's new venture is one of them.  

A proud son of Pampanga, the amusing names of Chef Sau's baked creations take inspiration from the Capampangan's penchant for adding an "h" to most words or replacing words starting with "p" with an "f" and the other way around hence his Vuco Fye and Heg Fye. And since Chef Sau introduced his indulgent Vuco Fye and Heg Fye which have become viral sensations on the net, he's already scheduled regular deliveries to Metro Manila three times a week to meet the growing demand.

The humorous names are a playful local twist but don't think for one minute that this is all fun and games with Chef Sau. He's deadly serious with his baked creations, and one bite is all it takes to prove that. The Vananah Walnut Tsokolateh Vread (P 695) is a grand upgrade of the popular banana bread loaded with imported walnuts and premium local Malagos Chocolate along with sweet bananas in a moist and dense bread that's almost like a cake. Make no mistake, this isn't your usual banana bread. Not by a long shot.


Once your Vananah Walnut Tsokolateh Vread is delivered, the first thing you'll notice is the weight. The rich and dense texture of the bread already tells you this is filled with all the good stuff plus some walnuts and large chunks of Malagos Chocolate too. It's an impressive sight, but like they say, the proof is in the pudding or in this case, the Vananah Walnut Tsokolateh Vread.


Once you open the lid, your eyes are drawn to the subtle sheen of the sweet glaze on the surface studded with walnuts and blocks of Malagos Chocolate followed by its fragrant aroma. The pressure you apply when you slice the bread is an indication of its density. The first bite delivers the sweetness of bananas followed by the nutty crunch of walnuts and the deep rich notes of chocolate. The moist texture of the bread brings it all together in one truly sinful finish. It's this play on contrasting notes and textures that sets Chef Sau del Rosario's Vananah Walnut Tsololateh Vread from your usual banana bread. And that's miles apart.


This one's seriously loaded. True to Chef Sau del Rosario's culinary style, he never skimps on ingredients so you can enjoy the full flavor experience just like his specialty Kare-Kare made with macadamias instead of peanuts and still one of my favorites at 25 Seeds. Every bite brings both walnuts and Malagos Chocolate to the palate. A slice reveals even more walnuts and Malagos Chocolate inside this decadent creation by Chef Sau del Rosario. Perfect with a freshly brewed cup of coffee, a slice can be filling but you'll probably want one more for that seamless blend of bananas, walnuts and Malagos Chocolate with each bite.
