Just how do you incorporate the fresh, sour and spicy notes of Vietnamese cuisine in a pasta? Here's how. The Saigon Vongole (P 450) incorporates the clean and bright flavors of Vietnam in a hearty pasta dish with plump Manila clams, succulent mussels and spaghetti in a light yet tart and flavorful Vietnamese broth. The briny sweetness of the clams and mussels come through with each bite followed by mildly sour notes of the refreshing light broth capped by the soothing heat from the chili. It's vongole unlike any other, and it works.
The light and fragrant broth coats each noodle draping it with bright notes, and the subtle nutty hints of garlic and peanuts add to the multiple layers of flavor. Refreshing and distinctly different, the Vietnamese inspired pasta dish from Chef Josh is another winner...

The Chicken Tandoori Pizza (P 475) recreates the exotic flavors of India with tender chunks of marinated roast chicken, red onions, yoghurt mint, provolone, mozzarella and tomato sauce on a crisp and rustic crust. The juicy chicken, with its smoky notes, adds its own layer of flavor to the pizza along with the red onions and yoghurt mint followed by the creamy provolone, mozzarella and tomato sauce.
The crisp crust, with its charred blistered edges, is a treat in itself. And like all of Chef Josh's creations, each flavor is perfectly balanced complementing the other.
