One of Australia's beloved and iconic names in the wine industry, Hardys has produced and continues to create some of the finest vintages from Australia that are prized in many lucrative wine markets around the world. Hardys has gone a long way since it was established at the lush and verdant McLaren Vale wine region. Founded in 1853 by Englishman Thomas Hardy, Hardys gained the unique distinction of being the first to ship wine from Australia to England back in 1857, earning him the title of Father of the South Australian Wine Industry. But Thomas Hardy didn't stop there. Today, Hardys sources its best wines from over 5,000 acres of vineyards located around Adelaide, South Australia's capital to serve a fast-growing global market. Held at Wave, the casual and laid-back pool deck of City of Dreams Manila, the Hardys Summer Chill Out began as the afternoon sun slowly faded casting its golden glow. By sundown, the vibe is transformed as the festive lights of City of Dreams Manila takes over. A glass of Hardys Stamp Riesling Gwurtztraminer gets you in the groove...

At the Carving Station, guests at the Hardys Summer Chill Out at Wave were treated to a savory duo of premium roasted meats...
...with the Smoked Beef Brisket, tender and juicy beef that will have you coming back for seconds and thirds along with another round of Hardys' signature reds...
...and the Slow-Roasted Lamb Shoulder with lemon, garlic and rosemary with its distinctive savory richness paired with roasted vegetables, baked potatoes with sour cream, and grilled corn with cheese.
The buffet spread included four salads, a variety of freshly-baked bread and cheeses, a Burger Station, a selection of Australian meat pies plus an equally impressive array of savory options fresh from the grill. Plate your own loaded version of surf & turf with Grilled Prawns with Lemon, Smoked Beef Brisket and Slow-Roasted Lamb Shoulder with a side of Arugula and Parmesan Salad drizzled with balsamic vinaigrette paired with your choice of fine wines from Hardys. Red or white, it's your choice. And your rules.
That evening, the full range of Hardys were served, from the classic Hardys Nottage Hill Shiraz with its vibrant full-bodied notes with an elegant smooth and soft finish to the diverse wine expressions of the Hardys Stamp Range with its unique Stamp of Australia design in line with Thomas Hardy's vision to bring Australia's best to the world markets. The celebrated line includes the Hardys Stamp Riesling Gwurtztraminer with its crisp aromatic citrus hints, the Hardys Stamp Chiraz Cabernet with its subtle cherry and oak notes, the Hardys Nottage Hill Chardonnay Semillon with its distinctive notes of tropical fruits and peaches, and the Hardys Stamp Cabernet Merlot with its bold flavors of oak and dark berries. Hardys signature Varietal Range, identified with its VR logo, were also served. The range featured the Hardys VR Chardonnay with hints of tropical fruits pairing well with chicken and seafood, the Hardys VR Chiraz with its intense spicy and cherry hints that go well with savory dishes like barbecue and desserts like dark chocolate, the Hardys VR Moscato with its refreshingly sweet notes that's perfect as an aperitif pairing well with cheese and desserts, the Hardys VR Cabernet Sauvignon with its deep oak, berries and nutty hints that's great with lamb dishes, and the Hardys VR Merlot with its rich blend of plum, cherry and vanilla character to complement savory dishes like spiced duck breast. But the best part of the evening is to go with the flow and find and discover your own pairings. Other decadent desserts served that evening included the Summer Stone Fruit Pavlova, Blueberry Eton Mess, Rum and Almond Nib Ball, and Raspberry Lamington with Raspberry Gel, each one pairing well with the Hardys VR Moscato.
From starters to mains and desserts, each course paired with one of the signature vintages from Hardys combined for a memorable evening woven with the rich heritage of the famed Australian label and the cool summer vibe at City of Dreams Manila's Wave.
