New Dishes, A New Brew and a Holiday Beer at The Brewery at the Palace

Smoky notes and hints of spices. The holidays get even better with a new brew, a special Christmas beer and new signature dishes... 


The Brewery at the Palace introduces a new line of refreshing brews alongside new dishes, adding a festive and flavorful vibe to the holiday season. That's more than enough reason to swing by The Brewery at the Palace for a round or two paired with some of their new dishes.


Since it opened a few months back (see my previous post on the launch here), I find myself going back time after time for a round or two of their fresh beer on tap, brewed right on the premises behind the long bar. And the best way to experience the brewing style of The Brewery at the Palace is with their Sampling Flight (P 280), featuring all four craft artisan beers. Start with the light, crisp and refreshing Pilsner (P 180-300ml/P 250-500ml), a Czech style lager with a clear golden hue and a smooth and elegant finish. Then, follow it up with a sip of their Weissbier (P 200-300ml/P 280-500ml), a filling wheat beer with bold, fruity notes. Next on your flight is the IPA (P 220-300ml/P 310-500ml), with more pronounced malty and hoppy flavors. Cap your flight with the full-bodied Stout (P 210-300ml/290-500ml), a dark beer with a hint of coffee in every sip. Depending on your mood, time of day, or even your dish, each one offers a distinct flavor and vibe. My preferences lean toward the IPA and the Stout, but I wouldn't mind a cold Pilsner or Wheat Beer anytime.


You can also try one of their special seasonal flavored brews, like the Ginger Ale (P 200-300ml/P 80 Single Beer Sampler), a top fermented beer infused with fresh ginger. With a bright golden hue, the Ginger Ale delivers a distinct floral and citrus aroma with malty body and a smooth ginger finish. The fresh ginger doesn't give it an overly medicinal taste, in fact, it's a surprisingly well-balanced brew with refreshing notes.


The new Smokey Oakey (P 240-300ml/P 310-500ml) is a richly flavored brew maturated with oak from whisky barrels giving it deep and bold smoky notes. One sip and layers of different notes weave seamlessly, starting with its pronounced roasted caramel flavor followed by shades of orange peel, rounded out by hints of malt, vanilla and wood. It's definitely a brew with character, with the rich notes lingering long after the first sip. The name says it all, and I just found a new favorite brew at The Brewery.


And just for the holidays, why not indulge in the new Christmas brew, Santa's Little Helper (P 240-300ml/P 310-500ml), a traditional holiday brew infused with six Christmas spices including cinnamon, star anise, cardamom, cloves, juniper berries, and sweet orange peel. Mildly sweet with its blend of spices, it's the perfect brew to jumpstart the holiday season. The Smokey Oakey and Santa's Little Helper reflects The Brewery's continuous and constant innovation and creativity, new brews that allow you to discover new flavor experiences. And that's why stopping by at The Brewery for a few rounds is special, with round after round of different brews to make it even more interesting.


Then, it's time to pair your beer with the new signature dishes from The Brewery at the Palace, like the rustic and comforting Chicken Bacon Mushroom and Ale Pie (P 380), a homemade pie with tender chicken, smoky bacon, and nutty porcini mushrooms cooked with their very own IPA in a spent grain pie crust served with a side of fresh greens and steak cut fries.


Made from spent grain from the brewing process, the buttery crust is light and crisp, retaining its form and texture as it absorbs the savory filling of chicken, bacon and mushrooms. There's just something so comforting with a freshly baked meat pie, and The Brewery's pies are a welcome addition to their signature dishes. Cooked with the signature IPA, the chicken, bacon, and mushrooms combine in a rich savory blend of rustic flavors. Pair this with The Brewery's signature IPA with its sharp hoppy notes to temper the richness of the pies, or go for the Smokey Oakey or Stout for a bold and hearty pairing.


And if you're looking for some serious pork love, go for The Brewery's Pork Chop (P 580), a thick and hefty slab of tender and juicy pork brined for 24 hours, and served with a side of salad and a sweet and tart Apple and Onion Gravy.


The Brewery's new Pork Chop is perfectly grilled and juicy, delivering a burst of mild yet rich notes with every bite. I've always enjoyed apples with pork dishes, with its contrasting tartness for balanced flavors with the pork chop. And again, Chef Carlo Miguel combines a fresh approach with comforting flavors reflective of his "freestyle" pub cuisine. Pair it with the Ginger Beer or even the new Santa's Little Helper with its refreshing flavors to contrast with the richness of the pork, or go for full flavors with the Stout or the Smokey Oakey. At The Brewery, it's your call.

A smoky brew, a Christmas beer, and new dishes, just in time for the holidays. And each one added to my list of favorites. The holidays just got better...at The Brewery at the Palace.

And it was also great to see familiar faces, old friends, behind the open kitchen of F All-Day Dining. As my old friends fired up the kitchen at F All Day Dining for the lunch service, the staff then laid the final touches on the impressive buffet spread. And F All Day Dining was then opened for lunch...


At F All-Day Dining, we sampled F1 Hotel Manila's new Yuletide dishes, including this impressive Stuffed Lechon Belly Kare-Kare, a succulent melt-in-your-mouth juicy and crisp pork belly stuffed with native vegetables, rich and creamy Kare-Kare sauce, and homemade shrimp paste.


It's your favorite Lechon Belly with a playful and inventive twist. The rich, sharp notes of the kare-kare pair well with the juicy, mild and delicate flavors of the pork for a winning combination. Other savory holiday dishes include Chicken Relleno, tender and flavorful whole chicken stuffed with a medley of ingredients and cooked inasal-style. F1 Hotel Manila also offers indulgent desserts, like the Yema Tart and the soft and chewy Sorbetes Crinkles in Ube and Queso de Bola flavors. For celebrations, you can also opt for F1 Hotel Manila's Party Platters and customized orders like Crusted Lamb Leg, Baked Salmon, Cashew and Thyme Crusted Salmon, Peking Duck, and Pad Thai delivered right at your doorstep.

At F All-Day Dining's buffet spread, the selection that day included savory Lamb Patties with Tomato Picante (L) and Salt and Pepper Duck (R), each freshly prepared with the finest premium ingredients.

The extensive selection also included fork-tender Braised Beef Cheeks in Cabernet Sauvignon (L) and a variety of fresh vegetable dishes (R) for another hearty feast at F All Day Dining.

Further down, you can find Fernando's 4-Day Marinated Pork Belly and Cucumber Salad (L) and Dorothy's Zamboanga Style Prawns (R), plump prawns cooked in rich crab fat, local dishes not to be missed at F All-Day Dining.


Beside the Salad Station, you can find F All-Day Dining's Fresh Seafood Station, with plump prawns that's great as is, or sauteed in garlic and butter.

Other selections included fresh Mussels (L) and Oysters (R), which you can have baked in cheese. Head Chef Decker Gokioco makes sure each station is filled to the brim with all their signature dishes for a sumptuous buffet lunch experience.


Head Chef Decker Gokioco also plated one of his new signature holiday dishes, Popcorn and Walnut Crusted Salmon with Tarragon, an elegant dish with rich flavors. I enjoyed the play on textures, with the popcorn and walnuts blending well with the creamy salmon and tarragon.

At the Dessert Station, you'll find an equally impressive selection of sweets, including delicate and ornate pastries to cakes, including a DIY Halo-Halo Station and some freshly prepared Churros with Spanish style hot chocolate. 


Later that evening, we were treated to a sumptuous Barbecue dinner served with cocktails at the Canary Lounge, ending the first day of our Holiday Staycation on a high note.

Christmas at The Burger Joint

Cherries on a burger? Why not...


The festive flavors of the Yuletide season are recreated with some of the most creative burgers yet. The Burger Joint introduces their new Christmas Burger and more...


I've always enjoyed The Burger Joint's classic burgers (more on The Burger Joint on my previous post here), and this holiday season, there's even more reasons to celebrate with their new signature burgers. Mike and Angel Hoese continue to push the envelope as they take the classic burger to a whole new level with their new and inventive creations. As the new signature burgers were being prepared, The Burger Joint's popular sides were served, including the Chili Cheese Fries (P 179) with thick wedges topped with chili, bacon, nacho cheese, jalapeno and egg...


...the Onion Rings Basket (P 89), a personal favorite, crisp and lightly battered onion rings with a creamy mustard dip...


...and the Buffalo Classic (P 179), savory wings with a mild heat. Wash it all down with a cold beer, and The Burger Joint offers a variety of premium imported beer including Heineken, Stella Artois, Hoegaarden, Corona Extra, and Blue Moon.


Then, Mike and Angel Hoese presented their take on Yuletide flavors with their creative and playful Christmas Burger, with two premium, all-beef patties with rich and smooth cream cheese in between the patties topped with sweet and tart cherries. Now you're probably thinking, cherries on a burger? Mike Hoese explained that the concept was inspired by the traditional turkey with cranberry combo, combining both savory and sweet notes for festive, holiday flavors.


And it works. The rich flavors of the premium, all-beef patties pair well with the cream cheese and cherries, adding layers of creamy richness and sweet and tart notes to complete the flavors. I have to admit, I had some doubts initially, but one bite settled it with a burst of contrasting flavors blending seamlessly, and you do feel the holiday vibe with this new burger at The Burger Joint. Cherries, cream cheese, and beefy burgers. It really does work.


Mike and Angel Hoese then presented their signature Juicy Lucy beef patty stuffed with cheese, this time, wrapped in bacon. The new Naked Lucy, wrapped in crisp and smoky bacon...pure genius.  


The intricate weave of bacon cradles the savory beef patty, and one slice reveals the creamy cheese stuffing. The rich notes of the juicy beef patty blends with the creamy cheese, punctuated by the sharp flavors of the bacon. Pair this with their crisp onion rings and a cold beer, and you've got a winner. Both the Christmas Burger and the Naked Lucy will be available within the week...


And there's more. Soon, The Burger Joint will be introducing a new all-day breakfast burger, the Waffle Burger, with their premium, all-beef patty with bacon, cheese, and a sunny side-up in between waffles. The dark maple syrup, egg, bacon and beef patty combine for familiar yet refreshingly new breakfast flavors. And I can have this any time of day. All day.


In the meantime, you can always enjoy their signature Juicy Lucy (P 290), a half-pound burger with melted cheese in the center, topped with more cheese, lettuce, tomato, onions, pickles, bacon, and special house sauce. And while you're at it, why not triple the fun with a triple decker, with three all-beef patties (P 90/extra patty).

Authentic Cantonese Flavors for the Holidays at Crystal Jade Dining IN

Celebrate the Yuletide season with authentic Cantonese flavors...


Crystal Jade Dining IN introduces their special Holiday Menu, with sets good for 6 to 10 persons and menu options reflecting the distinct and authentic style of Cantonese cuisine skillfully prepared by Crystal Jade Dining IN's master chefs. 


The famed Singaporean brand has long been known for its elegant and authentic Cantonese cuisine (for more on Crystal Jade Dining IN, see my previous posts on their authentic Chinese cuisine here, a special Thanksgiving feast to start the year right here, and their signature Peking Duck here), and signature dishes make up the new Holiday Menu. Our feast began with the hearty Fresh Shrimp Wanton in Almond Soup, with crisp shrimp dumpling in a thick and creamy almond soup. The crisp shrimp wonton adds both texture and flavor to the mildly sweet and nutty almond soup, a unique and flavorful combination that's comforting and perfect for the holiday season.  


Crystal Jade Dining IN's starter, Combination of Crispy Duck Sandwich with Shredded Duck Fruit Salad was then served next, showcasing the restaurant's signature duck. The delicately layered bite-sized duck sandwich is perfectly crisp, bursting with rich flavors. The creamy and refreshing salad pairs the rich notes of tender duck with sweet fruits, including mango and watermelon, for a sweet, tart, and savory blend of flavors.  


Then, the mains were served, starting with the Golden Baked Stuffed Crab Shells, with the delicate notes of crabmeat, potatoes, and vegetables baked in the shell. As with all of Crystal Jade Dining IN's dishes, each course is elegantly plated. And it tastes as good as it looks.


Next, Crystal Jade Dining IN's Pan-Fried Minced Pork with Salted Fish arrived, served with a sweet chili sauce. The mild yet rich flavors of the minced pork are punctuated by the salty notes of the fish for balanced flavors.


The Pan-Fried Minced Pork with Salted Fish paired well with the Fried Rice with Scallop, Crabmeat, and Crab Roe, with soft and fluffy rice mixed with egg, crab meat and crab roe. And the rice dish is great on its own too. Unlike local versions of Chinese cuisine, Crystal Jade Dining IN's dishes have milder, more delicate yet rich flavors, without being too salty.


Our final dish, Braised Fresh Mushrooms with Dried Scallops, was then served, with tender mushrooms and scallops in a thick sauce with steamed lettuce rolls. The pure and clean flavors of the mushrooms and dried scallops come through, and the thick sauce with just a whisper of sweetness completes the flavors.


The elegant feast is capped with Crystal Jade Dining IN's Baked Creamy Custard in Tapioca Pudding, an indulgent and creamy dessert with tapioca pearls. Not too sweet, and a perfect ending to another memorable dining experience at Crystal Jade Dining IN. Cloudy Days and Laksa at Wee Nam Kee

Nothing like a comforting bowl of noodles on a cloudy day...


Wee Nam Kee showcases the iconic Peranakan dish with its Laksa Festival, with three flavorful variants offering comforting flavors to make any cloudy day better.


As your Laksa is being prepared, why not nibble on Wee Nam Kee's Pork Spring Roll Bouquet (P 168), thin and crisp spring rolls served with sweet chili sauce. It's the perfect starter before the Laksa...


If you're looking for a light yet healthy bowl of noodles, Wee Nam Kee's Seafood Laksa (P 368) is a good option, a light yet flavorful variation with squid, shrimps, clams, minced pork, fish balls, and fish cakes on rice and egg noodles with fresh bean sprouts, cilantro, lemongrass, fish sauce, and chili in a clear steaming hot Singaporean spiced soup.


The light broth is creamy, almost milky, yet the flavors are delicate and mild. The rich blend of seafood add its own distinct layers of flavors, punctuated by the sharp notes of the cilantro and lime.


But if it's bolder flavors you're after, Wee Nam Kee's Hainanese Chicken Curry Noodles (P 368) fits the bill, a richly flavored and mildly spicy curry broth with the tender signature Hainanese Chicken of Wee Nam Kee and soft and chewy Thai noodles


The coconut cream broth is thick, tempering the heat of the chili and curry spices for balanced flavors. And the Hainanese Chicken completes the dish. It's not overwhelmingly spicy, but a soothing heat lingers long after the first sip. Both the Seafood Laksa and the Hainanese Chicken Curry Noodles are good for 2-3 persons, or one real hungry dude. You can also go for Wee Nam Kee's Classic Laksa (P 310), with its rich and spicy coconut cream broth loaded with pork mixed with fresh Hofan noodles in a curry and Szechuan sauce combination combined with egg, bean sprouts, fresh vegetables, and tofu skin. On tap or by the bottle, Pedro Brewcrafters offers a new craft beer experience, with rich flavors in every sip. At a pairing session, I got a chance to sample all three brews paired with some of the signature dishes from The Perfect Pint (for more on The Perfect Pint and its advocacy on local craft beer, check out my previous posts here and here).

Start with Pedro Brewcrafters'Endless Summer Wheat Ale, a light and refreshingly crisp yet filling brew, and the perfect introduction to Pedro Brewcrafters' style. The mild and delicate notes make it ideal for pairing with seafood and light dishes like The Perfect Pint's Truffle Fries, Calamari Negra (L), and Mussels in Beer (R).


Mildly sweet with a crisp and smooth finish, it's summer in a bottle. In contrast, Pedro Brewcrafters's Procrastination Pale Ale delivers bolder, hoppy notes best enjoyed at a more relaxed pace as you savor each and every sip. By all means, procrastinate, and enjoy. The more pronounced and upfront flavors coat your mouth with the distinct and sharp flavors of hops lingering long after the first sip, cleansing the palate, making it ideal for pairing with dishes with rich flavors, like The Perfect Pint's Sausage Platter.  


And finally, it was time for Elementary, English Ale, a traditional style beer and Pedro Brewcrafters' third and newest variant. A dark beer with the comforting flavors of roasted malt, it's the perfect brew to cap your beer flight. Robust and full bodied, pairing this with dessert is perfect, and, as they say, elementary. With hints of chocolate, coffee, honey and caramel, it's great on its own, or with The Perfect Pint's Freshly Baked Caramel Brownie Smores with Rhum Raisin Ice Cream.   


Three new brews, each one unique from the other, and a welcome addition to growing local craft beer scene. My personal preferences lean toward the Procrastination Pale Ale and the Elementary, English Ale with its upfront flavors, but I wouldn't mind a cold and refreshing Endless Summer Wheat Ale any day. And that's what makes Pedro special, with refreshingly new and flavorful expressions that enrich the craft beer experience.

Just Another Day at Leonardo's Lechon

Fiery hot charcoal are evenly spread on the pit, and the bamboo skewered pigs are gently laid to be slowly roasted for hours. It's just another day at Leonardo's Lechon...


At Leonardo's Lechon, the day starts early. And every day, their signature lechon is prepared exactly the same way since 1947.


Blazing red charcoal have fired up the pits at Leonardo's Lechon for nearly seventy years, preserving a tradition maintained by the family's third generation. The carefully selected native pigs are slaughtered once the orders are received, prepared and freshly dressed, pit-roasted for several hours on hot charcoal (for more on Leonardo's Lechon, see my previous post on their new Carnivore Lechon here and a second round with the Carnivore Lechon here).


Each pig is rotated by hand on the pit by the experienced litsoneros of Leonardo's Lechon, and the temperature is maintained with the constant addition of charcoal. You won't find any mechanical rotisserie or temperature gauges, only the experienced eye of the litsonero decide if the lechon is ready. With each slow twist, the litsonero adjusts the speed of the rotation to ensure the pig is evenly roasted, the way it always has been since 1947.


After several hours on the pit, the first batch of lechon is ready for delivery. The native pigs used by Leonardo's Lechon deliver richer, mildly sweeter notes, with just a thin layer of fat under the crispy crackling. The next batch is then prepared, dressed and slow-roasted on the pit. And with Christmas fast approaching, the pits at Leonardo's Lechon will remain fired up. And hours before the sun rises the next day, a new batch is prepared, and the cycle continues. It's just another day...at Leonardo's Lechon.

Time For Some Country Fried Steak...at Chili's.

It's one of those days when a craving for a certain dish just doesn't fade away. And when it's a craving for some good old fashioned Southern style Country Fried Steak, you can always count on Chili's to do the job...


Almost resembling the classic Wiener Schnitzel, and it's no surprise, since its origins can be traced back to German and Austrian immigrants who settled in the American Southwest, making this a southern classic on its own. The thin slab of beefsteak is tenderized, breaded and deep-fried, smothered with a creamy black pepper gravy. Pair it with some mashed potatoes and sweet corn-on-the-cob, and you've got a classic on a plate.


Start your Southwestern feast with Crispy Chicken Tacos (P 325-2pcs/P 435-3pcs), soft and chewy flour tortillas with crispy chicken breast topped with chopped bacon, diced tomatoes, cheese, and lettuce drizzled with honey chipotle and homemade ranch dressing served with cilantro rice and sweet corn-on the-cob. The contrasting texture of the tender and juicy chicken breast with its crisp layer of breading blends with the medley of rich flavors from the smoky chopped bacon, tomatoes, cheese, and fresh lettuce, with the honey chipotle and ranch dressing completing the flavors.  


For the mains, you can go for the Country Fried Chicken (P 450), tender and crispy chicken breast breaded and deep-fried with black pepper gravy, mashed potatoes, and steamed fresh vegetables...


...but for me, it's the Country Fried Steak (P 525), fork-tender, hand-battered beef steak with mashed potatoes and draped with creamy black pepper gravy served with a side of sweet corn-on-the-cob. It's everything you love about deep-fried dishes, juicy with a delectable crunch. One bite is announced by a crisp crunch, followed by the rich beefy notes of the beef steak, rounded out perfectly by the creamy black pepper sauce. The mashed potatoes and sweet corn complete the southern flavors. A Christmas Feast at Marriott Cafe

Christmas is just a few days away, and with the close of another year, there's just so much to be thankful for this holiday season... 


Marriott Hotel Manila's Marriott Cafe recently hosted a Christmas Thanksgiving Lunch with its sumptuous buffet spread to cap the year on a high and flavorful note, with the promise of even more to come in 2016. Marriott Hotel Manila continues to expand its property and services, and there's a lot to look forward to with the coming new year. But for this day, it was time to take stock and remember the countless blessings, and there's no better way to celebrate the season than with a hearty buffet lunch...at Marriott Cafe.  

Inside the spacious interiors of Marriott Cafe, one can feel the festive vibe of the season with the warm smiles from courteous staff (for more on Marriott Cafe, see my previous posts on their Sunday Brunch Buffet here, the Ocean's Harvest Seafood Buffet here, and authentic Asian flavors from their North Asian Showdown festival here).


After a refreshing bowl of fresh greens from the Salad Station, make a stop at the Fresh Seafood Station where you can find plump Mussels and Clams, as well as fresh Shrimps and Prawns...


...including fresh Curacha, or Spanner Crabs, on ice. Have it sauteed in Butter Herb Sauce with garlic or with a sweet and spicy XO Chiili Sauce, or have it baked with cheese or bechamel and chives, it's your call.


At the Japanese Station, you'll find a selection of high grade Beef, Pork, Chicken and an extensive selection of fresh Seafood and vegetables for the Teppan grill.


At Marriott Cafe's Carving Station, premium US Choice Ribeye was served that day, guaranteed to satisfy any carnivorous craving. Time to pick up a plate and sample Marriott Cafe's different offerings from their live stations...


Start with some Tempura from the Japanese Station, light and crisp and fresh from the fryer...


...followed by some Gambas in butter herb sauce from the Fresh Seafood Station...


...and Prawns in XO Chili Sauce, each prepared ala minute by Marriott Cafe's station chefs. At Marriott Cafe, simply choose your seafood and have it prepared any way you like it, and the dish will be served in minutes. The station chefs will also be glad to share their recommendations...


...like the highlight of the Fresh Seafood Station. For the main course, it's definitely time for Curacha, delicately cooked in butter and garlic. Flown in fresh from down south, the Spanner Crabs are huge, with its succulent white meat and crab roe.


The meat is soft and tender, with a whisper of briny sweetness layered by the rich notes of the butter and garlic. Simple, pure, clean and fresh flavors, it's the way to go with the freshest seafood.


Don't pass up on the US Choice Ribeye, with a side of mushroom gravy and grilled vegetables. With its juicy pink center, each bite delivers bold and beefy notes. And if you're up for it, Marriott Cafe also offers other selections from its Chinese Station including dimsum, noodles and assorted roasted meats; savory Pork Binagoongan, freshly grilled seafood and Lechon Kawali from the Filipino Station, and more.

For dessert, choose from a wide selection of indulgent pastries, cakes and homemade ice cream at the Dessert Station, like my personal favorite, Palawan Hazelnut and Dolce Latte topped with pistachios, and the refreshing Coconut Sorbet (L). Guests for the Thanksgiving Lunch were also given a special Gingerbread House (R).

The Christmas tree is decked and lit, holiday dishes are laid on the table, along with a Gingerbread House...it's Christmas.


The festive flavors of Christmas come alive with Marriott Hotel Manila's Gingerbread House, bringing back fond memories of childhood Christmas celebrations with family and loved ones.


After a special Thanksgiving Christmas feast at Marriott Cafe (more on the Thanksgiving Christmas Lunch Buffet at Marriott Cafe on my previous post here), guests were gifted with a Gingerbread House, a Christmas treat from Marriott Hotel Manila. The intricate details of the Gingerbread House starts at the roof...


...complete with a miniature Santa for that cool holiday vibe.


Each side of the Gingerbread House is ornately decorated with a vibrant palette of Christmas colors, including the iconic snowman and holly to complete the Christmas look. And the fragrant aroma of cinnamon, ginger and sweet spices fill the air.

A Steak and a Beer at The Brewery

A premium steak and a good beer...


...it's pub grub elevated to a whole new level. And just one of the many signature main dishes reflecting the freestyle pub cuisine of Chef Carlo Miguel at The Brewery


The Brewery at the Palace is one of the metro's unique dining concepts where you can enjoy a wide variety of modern pub grub paired with a selection of signature craft beer brewed on the premises. Your feast begins with a serving of The Brewery's House Bread, made from spent grain used in the beer brewing process. It's one of those little details unique to The Brewery, making your experience even more special.


The 12 oz. US Angus Beef Ribeye (P 1,850), an impressive slab of premium beef finished with Cafe de Paris butter, and served with a side of garden fresh salad and creamy mashed potatoes. You can also opt for other sides, including steak-cut fries, brown rice pilaf or steamed rice.  The tender and juicy ribeye is perfectly grilled to medium rare, with a juicy pink center delivering bold and beefy flavors with every bite. Draped in Cafe de Paris butter, a butter-based sauce, with its layer of creamy notes adding to the richness of the dish. A separate pepper-based gravy is included, with its sharp notes to balance the richness, but the steak is really good on its own. Pair your steak with The Brewery's new Smokey Oakey (P 240-300ml/P 310-500ml), a full-bodied brew with bold and smoky notes of roasted caramel, hints of orange, and layers of malt, vanilla, and wood (more on The Brewery's new brews on my previous post here). The pronounced smoky notes, infused by maturation with oak from whisky barrels, makes this brew a perfect match with the rich beefy flavors of The Brewery's 12 oz. US Angus Beef Ribeye. The Brewery's signature Stout or IPA should also pair well with the steak.

Burgers on Parade at The Burger Joint

Prepare for a sumptuous parade of unique burger creations...


The innovative burger creations at The Burger Joint just never fails to impress (for more on The Burger Joint's line of signature burgers, see my previous post here, and their inventive Christmas-inspired burgers here), with each variant recreating classic American flavors. Read on for a flavorful visual tour of The Burger Joint's signature burgers and prepare to drool...


Start with the signature flavors of the American West with the Ranchero Chili (P 199), a quarter pound patty topped with chili, American cheese, and crisp bacon. Each bite delivers a rich medley of flavors, with the distinct notes of the juicy beef patty followed by the chili, cheese and bacon. Chili, cheese, and bacon on a patty with fresh lettuce, what's not to like?

The mozzarella and marinara sauce combine for that classic Italian touch, with the sharp notes of the capers completing the flavors. And with The Burger Joint's burgers, both the bun and the patty remain firm without crumbling all the way to the last bite.

The United Flavors of Singapore at Wee Nam Kee

New Singaporean dishes, including your favorite Hainanese Chicken taken to the next level...


Wee Nam Kee serves up its United Flavors of Singapore with new Singaporean dishes, including the premium Steamed Hainanese Yellow Chicken for a whole new and refreshing dining experience.


At Wee Nam Kee, I always start with their Crispy Mantou Bread with Condensed Milk (P 78), simply tear off a piece of the soft bread and dip it in condensed milk. A few more bites and the main dishes arrived...


Singaporean Beef Noodles (P 225), tender seasoned chunks of beef brisket marinated in beancurd with Taiwan pechay and straw mushrooms on a bed of boiled Hong Kong noodles, served with a bowl of soup on the side. The fork-tender chunks of beef and soft mushrooms draped in a thick sauce deliver rich and savory notes, perfectly complemented by the soft yet firm and chewy Hong Kong noodles.


Claypot Chicken Rice (P 240), soft and moist rice topped with tender boneless chicken sauteed with Chinese chorizo, black mushrooms, onion leeks, and ginger in oyster sauce with Asian spices served in an earthen clay pot. Slices of Wee Nam Kee's signature Hainanese Chicken add to the distinct Singaporean flavor of the dish. The subtle flavors of the Hainanese Chicken is complemented by the sharp notes of the Chinese chorizo, ginger, and oyster sauce, as the soft and moist rice absorbs all the rich flavors. Steamed Hainanese Yellow Chicken (P 428 Small for 2 persons/P 848 Medium for 3-4 persons/P 1,638 Large for 6-8 persons), premium and imported yellow chicken known for its juiciness, rich flavors, and extra tenderness expertly prepared by Wee Nam Kee's skilled chefs. The distinct color of the succulent yellow chicken is a result of a special diet composed primarily of corn, setting it apart from the usual chicken variety. And the flavors are more pronounced, noticeably richer than the usual chicken, making it perfect for the classic Hainanese Chicken dish.


Soft and tender, the mild yet rich flavors of the chicken bursts in your mouth with each bite, taking your Hainanese Chicken experience to a whole new level of flavor. Nat's Honey-Cured Ham, Garlic-Brined Chicken and Classic Lasagna Bolognese

Here's what keeps Chef Nathaniel Uy busy this time of the year...


Every year during the holiday season, Chef Nathaniel Uy, or simply "Nat" of the hungry chef, works long hours in his home kitchen preparing his signature dishes for holiday orders. A brief one-day lull between Christmas and New Year orders allowed Chef Nat to share his holiday bestsellers in a casual lunch with friends. And what a feast...

We sampled Nat's signature dishes at the elegant 22 Prime, twenty-two floors above the Ortigas CBD at Discovery Suites (for more on 22 Prime, see my previous post here), the perfect setting for a post Christmas lunch before the new year.


A cocktail before the feast is always a good idea at 22 Prime. And there's no better time to enjoy the inventive Foie Old Time's Sake, the classic Old-Fashioned infused with foie gras (for more on 22 Prime's cool cocktails by Enzo Lim, see my previous post here). Each sip delivers layers of deep, smoky notes of bourbon followed by sharp citrus hints and the subtle richness of foie gras.  


Nat's rustic and comforting Classic Lasagna Bolognese, with layers of soft yet firm and chewy homemade pasta, five kinds of cheeses, and savory beef. The baked top crust with Nat's blend of cheeses deliver a richness that completes the holidays.


Nat's Garlic-Brined Chicken, slow-roasted tender and juicy chicken with marble potatoes and carrots, is then served next. The fall-off-the-bone chicken is juicy, with hints of nutty garlic complementing the delicate flavors of the chicken. Pork Love at Tonkatsu Maisen

Starting the new year with something familiar yet refreshingly different...  


It's sukiyaki with an inventive twist, Tonkatsu Maisen's Pork Sukiyaki adds a unique spin to this Japanese classic with tender strips of tenderloin katsu in a light broth with vegetables. And the new year is off to a good start...


I always start a meal at Tonkatsu Maisen with my favorite salad, the Crab and Cucumber Salad (P 190), with soft crab meat and thin slices of cucumber in a creamy Japanese mayo dressing (for more on Maisen, see my previous post on the formal opening here), the perfect light and flavorful starter before the main course. 


A side dish of Grilled Salmon (P 250), with its fresh and clean flavors, is always a good addition to your meal at Tonkatsu Maisen. The creamy flavors of the salmon, specially the part with the thin layer of skin, simply bursts with rich notes with every bite. 


No meal at Tonkatsu Maisen is complete without any of their signature katsu dishes, like the Chicken Katsu Set (P 350), crispy and juicy chicken katsu served with rice, cabbage, pickle set, fruits, and miso. The contrasting textures of tender, juicy chicken and the crisp outer layer of light breading are executed perfectly at Tonkatsu Maisen.


For the main course, it's Tonkatsu Maisen's Pork Sukiyaki Set (P 520), with tenderloin katsu, rice, pickle set, fruits, and miso soup. It's sukiyaki with Maisen's special twist, using thin strips of pork tenderloin instead of beef.


The delicate notes of the pork are infused in the broth, absorbing even more flavors from the vegetables, mushrooms and the egg. Almost resembling strips of bacon, the tenderloin katsu adds its own distinct richness to the dish. The chunks of tofu are soft yet firm and chewy, completing the dish. It's going to be another good year. Here's wishing everyone a happy new year...
